Winter Food and Wine Series at the Hilton Adelaide features a medley of meaty goodness

The months of June, July and August will each have their own curated menus, designed to introduce customers to a range of premium winter meats.

When the cold weather rolls in, Coal Cellar + Grill (thankfully) rolls out its Winter Food and Wine Series, proving that all good things aren’t exclusively reserved for the summer months.

The months of June, July and August will each have their own curated menus, designed to introduce customers to a range of premium winter meats and a diverse choice of cooking techniques.

First up is June’s Beef & Barossa menu, which showcases some of the very best locally-sourced products and Seppeltsfield reds. A standout appears to be the smoked and braised beef shank for two, accompanied by saffron risotto, charred corn, heirloom carrots, and preserved lemon gremolata.

You had us at “beef shank for two”. Talk about must-dos for Winter! Cosy up with a 2019 Seppeltsfield The Westing Shiraz, and you and your significant other will be set for the evening.

July will be the month of Tomahawk & Torbreck. Mark Dixon, the man who has led the Hilton’s butchery department for 24 years, has certainly sourced some unique cuts for the Winter series – including the Tomahawk.

For those who may be unaware, a tomahawk is a ribeye beef steak with at least five inches of rib bone left intact. The extra-long, handle-looking bone mimics the appearance of a rack of lamb and helps preserve the juices in the city for optimal flavour. The superior cut of meat is known for its impressive marbling (balance of fat), which means it will be a flavour party in your mouth.

There will be lamb, pork, and beef tomahawk options – the later of which is Coal Cellar + Grill’s signature 1.2kg Beef Tomahawk for two. Accompanied with black truffle potato gratin, charred broccolini, roasted Japanese pumpkin and a Yorkshire pud, the Beef Tomahawk is sure to impress.

Finally, the month of August will be dedicated to Ribs & Rockford, which is sure to knock your socks off. The Whisky and Maple Glazed Pork Ribs sound deliciously indulgent and decadent, paired with the 2018 Rockford Moppa Springs GMS.

Coal Cellar + Grill will kick off its Winter Food and Wine Series from 1 June, so there won’t be a single Winter’s Day that will go without premier grill options and red wine.

If your dining partner isn’t a red meat eater or red wine drinker, this limited time offering will run in conjunction with the restaurant’s premium menu, featuring an impressive list of 500 wine options. In other words, there will be something for everyone.
