The Kangaroo Island Spirits location is set to undergo a $3 million masterplan development, making it a world-class distillery, and a must-see destination for locals and tourists alike.
The development is slated to begin with the construction of a new distillery, with a third still added to increase production capacity for the domestic and export market of the award-winning Kangaroo Island Spirits gin, vodka, and soon to be released single malt whiskey.
The new distillery will also feature a spirit tasting room and education space, envisioned to overlook production.
For the existing cellar door, an upgrade is in the works, with the intention for the space to focus on serving visitors KIS spirits and cocktails in the native botanical garden which serves as inspiration for the brand’s botanical driven gins.
Kangaroo Island Spirits was founded by Jon and Sarah Lark, and is both one of Australia’s most awarded gin brands, and the first dedicated gin distillery in the country.
In March of this year, Kangaroo Island Spirits was acquired by Founders First, industry leaders in supporting and growing independent craft brewery and distillery businesses.
“Kangaroo Island is internationally famous for its wilderness, wildlife, and world-class food and beverage industry,” says Founders First CEO Mark Haysman.
“The development of KID will give visitors an immersive experience that will be truly something special and ensure we continue to meet strong local and global demand we are seeing for premium gin and spirit products.”
The Larks will continue leading production at the distillery, with innovation a major focus for the two, and the whiskey release slated for later this year.
“This will enable us to offer more educational and interactive experiences, people will be able to have the opportunity to learn the art of gin making and creating cocktails from our KIS range in the new space,” says Sarah Lark.
The project is expected to create 20 jobs during contructohn, and 25 ongoing jobs for locals once completed.
The second stage of the development will see the construction of commercial kitchen, and a potential plan for accomodation to cater for those staying the night.
