Acclaimed Sydney chef Mitch Orr will take over Bar Canopy for two exclusive days during Tasting Australia 2026, with intimate lunches and relaxed evening snack sessions.

One of Australia’s most progressive culinary talents is heading to Adelaide this May, with acclaimed Sydney chef Mitch Orr set to take over Bar Canopy for an exclusive Tasting Australia 2026 collaboration.

For two days only on May 8 and 9, Orr will step into the Hindley Street wine bar’s kitchen, bringing his bold, produce-led cooking and unmistakable edge to a limited series of intimate lunches and lively evening snack sessions.

Orr says he’s long been drawn to South Australia’s collaborative hospitality culture and is eager to immerse himself in the state’s produce and energy while in town. “I’ve always admired South Australia’s energy. It’s home to one of the most exciting and collaborative hospitality scenes in the country,” he says. “There’s a real respect for produce here, and I’m looking forward to working closely with local suppliers and showcasing some of that incredible quality on the plate. Tasting Australia is such a dynamic time to be in Adelaide, so I’m keen to not only cook at Canopy, but to get out, experience the events and be part of the broader conversation while I’m in town”.

At Canopy, Orr will host four exclusive lunch sittings across the two days, held in the venue’s private dining room. Guests will experience a curated menu that blends signature dishes with new creations, offering a rare chance to dine up close with one of the country’s most talked-about chefs in an intimate setting.

The experience will be complemented by an optional wine pairing curated by Canopy’s sommelier Henry Bampton, widely regarded as one of South Australia’s most exciting emerging wine talents. Known for his intuitive palate and storytelling approach to wine, Bampton will guide guests through a considered selection from Canopy’s cellar, pairing precision and personality with Orr’s flavour-driven dishes. Together, the kitchen and cellar promise a layered dining experience that celebrates the depth and diversity of South Australia’s wine culture.

As evening falls, the format shifts to a more relaxed, high-energy offering. Orr will remain in the kitchen for casual snack sessions designed for the broader Tasting Australia crowd, with entry including a spritz on arrival and access to a short-form menu of cult favourites available à la carte. The evening sessions invite guests to experience Orr’s cooking in a spontaneous, wine-bar setting that captures the festival’s collaborative and culture-forward spirit.

Widely regarded as one of Australia’s most influential contemporary chefs, Orr built his reputation in Sydney’s leading kitchens before co-founding the award-winning ACME, which gained a cult following for its inventive approach to Italian-inspired dining. In 2025, he opened The Palomar in Sydney, continuing to push boundaries with genre-defying menus that blend global influences with a distinctly modern Australian perspective.

With limited seats and high demand expected, the two-day Canopy takeover is shaping up to be one of Tasting Australia 2026’s most sought-after dining experiences.
