Earlier this year, Singapore’s acclaimed Tippling Club touched down in SA for a very exciting residency at Canopy. Now they’ve extended the fun for one final week, and they’re going out with a bang. From Wednesday, December 3rd to Saturday, December 6th, Chef Ryan Clift, known internationally for his boundary-pushing, genre-defying approach to dining, will join forces with some of our most dynamic culinary names.
Each evening, just fourteen diners will take their place in Canopy’s intimate private dining room, where Ryan and his guest chef team up. Together, they’ll move the menu through a sequence of four snacks, four mains and two desserts, with each course intended to highlight the chemistry between the two in the kitchen. This is all about precision, spontaneity, and the kind of theatrics that has made the Tippling Club a global dining phenomenon.


The four-night series will have an extraordinary line-up of talent on show. Kicking things off on Wednesday, December 3rd, is Adam Liston of Yakisan, whose new North Adelaide hotspot is gaining a reputation for smoky, umami-charged plates and cool, contemporary energy. Together, they plan on bringing together a taste of Tokyo-meets-Tanjong Pagar to Adelaide.
On Thursday, December 4th, you’ll be able to take a walk on the wild side as Ryan teams up with Duncan Welgemoed of Africola. Known for his fire-driven, no-holds-barred cooking and larger-than-life presence, Duncan’s collaboration is sure to be explosive.
Friday, December 5th welcomes Fabian Lehmann of Maxwell Wines, whose elegant, European-inspired cooking will showcase South Australia’s top seasonal produce. His balance of restraint and refinement will meet Ryan’s daring modernism in what is sure to be a night of beautiful contrasts.
Finally, the series concludes on Saturday, December 6th with Justin James, the visionary behind the soon-to-open Aptos in the Adelaide Hills. Known for his innovative use of native ingredients and progressive approach to Australian cuisine, Justin will join Ryan for a finale that’s nothing short of spectacular.


This wraps up the Tippling Club’s Adelaide residency, which has brought international-level dining and cocktail innovation to the city. With only fourteen seats available each night, these dinners will be coveted.
There will also be a chance to get in on the action a little later each night when the energy spills into the bar. From 9pm, the chefs will serve a four-course snack menu that’s an after-hours edit of their most iconic dishes all alongside Tippling Club’s famous cocktail list. As with the entire residency, the bar will also be in full takeover mode each day serving Singapore’s signature concoctions from 4pm daily.
