Hoo boy. This is everything we didn’t know we needed this Friday.
New food pop-up Springies is opening in Adelaide selling nothing but SPRING ROLLS.
And we’re not talking your average spring roll. We’re talking thick, stuffed full of fillings with outrageously good flavour combos.
Local Stefan Nestorovic is behind the genius venture. And it’s a big change for Stefan – he’s always worked in retail and said he’s “only really cooked simple stuff,” before. But he’s always wanted to get into food, and he really, really loves a spring roll.
Stefan’s currently going through the trial and error of putting together his menu and taste tasting (which sounds like our dream TBH). Flavours he’s worked on so far include the cheeseburger spring roll:
Burek spring rolls, based on a traditional pastry dish served in the morning in the Balkans with beef and potato, and served with yoghurt:
Other flavours he’s working on include mac and cheese, mashed potato with bacon, and pepperoni pizza.
And there aren’t just savoury options. He’s so far created a Nutella spring roll, an apple cinnamon, and an Oreo version.
He’s going to start off by popping up at markets but his dream is to eventually have a Springies bricks and mortar eatery. (That’s our dream too Stefan).
Stefan hopes to have Springies up and running in a few weeks – keep an eye on their Instagram for details of their first pop-up.
