Hospitality trio Alex Bennett, Josh Talbot, and Oliver Brown are continuing to make their mark on Prospect’s primary dining strip.
The three co-founded popular pizzeria Anchovy Bandit, and have now purchased the space next door, expanding the restaurant’s dining room, and opening a new, deli-style eatery.
2020 has been a year of adaptation for the three, and Anchovy Bandit, like many restaurants, jumped into the takeaway scene.
With the ongoing restrictions, Alex says they soon realized the only way to get people into the venue was to “get bigger.”
They reached out to Anchovy Bandit’s neighbour, New Nordic, and ended up taking over the space.
Anchovy Bandit’s dining room spills into half of the new area, with the other half transformed into a daytime offering, aptly named Bottega Bandito (bottega meaning shop in Italian).
Alex tells us the menu has also undergone a revamp, with pastas and additional mains now on offer.
Shane Wilson (who previously worked at Hentley Farm, Bistro Dom, and Orana) has taken over as executive chef across both Anchovy Bandit and Bottega Bandito.
The head chef role will be filled by Michael Henderson, who worked with Shane at Hentley Farm.
Studio-gram is responsible for the fit out of both Bottega Bandito, and the expanded Anchovy Bandit dining area.
Although a wall will separates the venues, Alex says the new Anchovy Bandit space “marries the two together.”
