Anchovy Bandit’s chef collaboration series kicks off this month with Coriole’s Tom Tilbury

Prospect pizzeria and pasta bar, Anchovy Bandit, is inviting you to enjoy marvellous feasts cooked up by some of the best SA chefs with its new The Bandit Chef Series.

The Bandit Chef Series is a collaboration with chefs who will be joining Anchovy Bandit’s Executive Chef Shane Wilson in the kitchen for one night only.

Each chef will take the reins in the kitchen, infusing their own style to create twists on Italian classics.

The series kicks off on Sunday October 31 with McLaren Vale’s Gather at Coriole Executive Chef Tom Tilbury.

For $85 a head, the duo will be rolling set menu of 5-6 courses, starting with snacks and small plates moving through to pizza, pastas and mains, topped off with a dessert.

The feast will be offered across two sittings at the Anchovy Bandit venue.

The menu will be released in the lead up to the event, however if Tom’s menu at Gather is any guide, expect natural, native Australian produce on the cards.

The idea behind the series is to give the Prospect community a new experience, blending different cultures and developing exciting dishes full of new flavours – something fresh for everyone to try.

Anchovy Bandit co-owner Alex Benett says the new series an a unique and fun way to collaborate with other amazing chefs.

“Shane’s version of Italian draws influence from cuisines all over the world, sometimes the combinations sound weird, but what sounds weird ends up being F-ing delicious,” Alex says.

“We wanted to celebrate this, so we invited like minded chefs to have a play and maybe even get a bit weirder with our menu.”

Gather at Coriole’s Tom Tilbury is well-known for his time at d’Arry’s Verandah Restaurant and Margaret River’s Cullen Wines.

He is now running fine diner Gather at Coriole (once called Gather Food and Wine) which is an acclaimed restaurant residing in McLaren Vale’s Coriole Vineyards.

Tom’s ever evolving menu celebrates seasonal and local goods, collecting most of his produce from the Coriole property and surrounding area.

Expect to see his take on the cult classic Anchovy Bandit dishes with foraged wild produce that’ll be popping up in the Adelaide and McLaren Vale area this summer.

Executive chef Shane Wilson says he looks forward to collaborating with Tom.

“We’re going to let Tom take the reins on the night, the menu will be his take on our menu, snacks, pizza and pasta. I’ll be here to help make it fit the ‘Bandit’ vibe.”

The first event of The Bandit Chef Series will take place on October 31 with the first sitting at 5:30pm and the second at 8:30pm.

The event will be held at Anchovy Bandit located at 96 Prospect Rd, Prospect.
