Truffle lovers, it’s your last chance to indulge in the black and white truffles pop up at the Adelaide Central Market

Adelaide Hills Truffles is popping up at the Central Market with fresh truffles, decadent treats, and a feast for the senses.

Adelaide Hills Truffles is bringing the rich and aromatic world of truffles to the city with a three‑week pop up at the Adelaide Central Market. As part of the Producer in Residence program, the stall will give shoppers the chance to experience South Australia’s premier truffles, meet the producers and explore a selection of unique truffle products.

Katherine and Justin Faull are the passionate duo behind Adelaide Hills Truffles, They are very excited to be able to share their story and truffles with Adelaide gourmet food lovers.

Visitors to the Central Market in the first three weeks in August can expect fresh truffles alongside indulgent truffle products that showcase the flavour of the real thing.

“There are very few proven methods of preserving truffles, and so many products on the market rely on synthetic truffle aroma,” Katherine says.

“We’ve created items like our black truffle meringue kisses, which we call Truffle Bombes, and our Golden Leaves truffle honey, which incorporates lashings of real truffle slices.”

These products let shoppers enjoy the unique flavour of truffle at home without compromise.

The pop up will also highlight the difference between black and white truffles, giving visitors a rare opportunity to experience both.

“Our black winter truffles are earthy and umami‑rich, perfect shaved over risotto, eggs or potatoes,” Katherine explains.

“The white spring truffles are more delicate with a garlic aroma that transforms in cooking, adding citrusy notes to dishes like risotto or enhancing SA king prawns on a white pizza.”

The white truffle season overlaps with the tail end of the black truffle harvest, so city shoppers will be able to enjoy the best of both worlds.

Katherine says education is at the heart of everything they do.

“Very few Australians have tried fresh truffles, and many only know the synthetic versions. We love showing people how simple it is to cook with real truffle and how much flavour it brings to a dish.”

The Central Market pop up is set to deliver that experience in a setting that celebrates local producers and seasonal luxury. For those who have not had the chance to visit the farm or join a truffle hunt, this city market showcase offers the perfect taste of an unforgettable delicacy.

Katherine and Justin started their truffle venture in 2017 when they swapped city life for a hillside property with the perfect soil and climate for truffle farming.

“Justin is a foodie and I have a background in biological and environmental sciences, so truffle farming became the perfect fit,” Katherine says.

“It offered us a challenge and an opportunity to create something meaningful for our family.”

The couple planted over 600 inoculated trees and nurtured them into production, harvesting their first truffles in 2021.

The farm has grown rapidly in both yield and quality.

“Our yield has increased at least 100% year on year, and this season we’re tracking at a 120% increase from last year,” Katherine says.

“Every mature truffle we harvest feels like a small miracle. It’s the result of science, experience, technology and a little luck coming together.”

As President of the Australian Truffle Industry Association, Katherine is dedicated to promoting and supporting the producers right around the country.

And right here at home she enjoys maintaining and managing their farm as a family of three, with Justin and their 12 year old daughter, Scout, who are all heavily involved in irrigation management, truffle harvesting and dog training.
