Brandom brings new direction to North

The culinary creations of up and coming chef Ashley Brandom have already impressed some of Australia’s toughest food critics, and he is now set to delight diners with a new direction as Chef de Cuisine at Adelaide Casino’s signature restaurant, North. With the likes of Matt Preston giving Brandom his seal of approval, he is one of South Australia’s most exciting young chefs.

Brandom’s resume already boasts some impressive culinary experiences, including working under the tutelage of Michelin star chef Mark Treasure in the UK, Jerome Tremoulet at Penfolds Magill Estate and most recently at award winning Adelaide restaurant Press*. Now the 28 year old intends to put his own stamp on the North menu with Modern Australian cuisine and an introduction of some French techniques and methods to the kitchen.

The newly released autumn menu pays homage to this new direction, while remaining true to the restaurant’s focus on using the best seasonal and local produce.

“My education was very much influenced by French cuisine, so diners can expect to see many of these techniques introduced to the North menu,” he said.

“Some examples from our new autumn menu include the baked mushroom and spinach pithivier served with the roasted lamb rack, lentils and duck fat potatoes, while on the desserts menu we have a decadent dark chocolate marquise.”

The Australian born but English raised chef, who trained at UK’s Salisbury City Culinary  College, said a move to Adelaide 10 years ago revitalised his career.

“I moved to Adelaide after deciding to leave the UK and travel overseas for a while. I was immediately inspired by the variety and quality of produce on offer here – the seafood, vegetables, organic meat and dairy are just some of the standouts for me,” Brandom said.

“It really did inspire me up and gave me a renewed vigor with my cooking.”

Opened in 2005, North is Adelaide Casino’s signature restaurant. Conveniently located near the corner of Station Road and North Terrace, North is open 9am until late Monday to Friday, 11am until late Saturday and public holidays and 5pm until 9.30pm on Sunday.
