Fried chicken has been flying out the doors of CBD pub Saracens Head Hotel ever since Victorian chook frying experts Hot Chicken Project set up shop back in February.

For a limited time only Adelaidian’s are being treated to all things wings, tenders and drumsticks and now that they’re a month in, have you been? And if not, why?!

Originally scheduled for a 3-month stay, the collab has proved so popular that the team has decided to extend indefinitely. “We want to give everyone in Adelaide the chance to experience what’s on offer”, says Saracen Head Hotel manager Annie.

Hot Chicken project is a Nashville inspired fried chook shop, and brainchild of award-winning chef Aaron Turner and is synonymous with a trip to regional Victoria – garnering an almost cult status amongst road-trippers and locals of the Geelong and Anglesea stores.

Turner fell in love with Nashville’s fried chicken scene after spending time in the US city and Adelaide is the acclaimed chef’s first pop-up location outside of Victoria.

Harbouring his hankering for crispy fried chicken, he’s poured his passion into Hot Chicken Project since 2015.

Chow down on hot wings, tenders and salty fries or indulge in chicken burgers, classic fish sandwiches or mouthwatering ribs.

Punters will be able to pick their poison –- aka spice level (which reaches a face-melting evil!) — their meat of choice (wings, tenders, dark meat) or tofu, sides and dipping sauce.

Wash down the hot chicken greatness with lo-fi Adelaide Hills’ wine or craft beer on-tap as you settle into the re-vamped bones of the Saracen’s Head. Fancy more than a tipple? Peruse the wall of wine and pick your favourite to drink or take home.

The Hot Chicken Project pop-up is one of several plans for the pub, which will also re-introduce live music and undergo major renovations later this year. The Saracen’s Head was bought by emerging hospitality group Duxton Pubs last year, with its former fit-out flipped and pivoted.

“When I walked into the pub before we bought it, one of the first things I thought of was Aaron and his hot chicken because I’ve always really enjoyed hanging out there,” said the Duxton Pubs’ general manager Josh Hillary.

“I lived in Melbourne for a while and we’ve spent a lot of time in each other’s restaurants.

“I think we’d like to see some sort of long-time relationship blossom between us and Hot Chicken, and we’d look to explore the potential of some of their other brands.”

Hot Chicken Project is on at the Saracens Head this Friday and trade Wednesdays to Sundays from 12pm to 10pm.

Find the Saracen’s Head Hotel at 82 Carrington Street Adelaide, SA, Australia 5000.
