An exciting new venture in the Adelaide Hills has surfaced, as Chef Kane Pollard teasers the inception of “Ondeen” on the revered former Maximilian’s site in Verdun.
This venture is a brainchild collaboration between Full Circle Spirits and esteemed South Australian chef, Kane Pollard. While details remain scarce, the promise of a bar, cellar door, and kitchen hints at an immersive experience on the horizon.
Chef Kane Pollard, a luminary in South Australia’s gastronomic landscape, took to social media to express his gratitude and offer glimpses into the project. In a post he unveiled his role as part-owner and culinary director of Ondeen.
“We’ve been working hard, peeling back a few layers of the old building to really show the beauty within,” Pollard shared. The former Maximilian’s site, steeped in history and sitting among picturesque vineyards, holds the promise of a real foodie renaissance under Pollard’s stewardship.
“It’s a big, beautiful site. [We’ve] got a lot of plans…. It’s going to be the new epicentre of food, beverage, and just taking a little bit of time out for yourself, by yourself, or with people that you love.”
Kane Pollard’s journey is intertwined with the ethos of sustainability and reverence for local produce, a philosophy that resonates with the essence of Ondeen. Raised in a family deeply rooted in Adelaide Hills’ market gardening, Pollard’s formative years instilled in him a profound appreciation for the interplay between produce and place.
His culinary evolution, marked by stints in esteemed kitchens both locally and abroad, culminated in the establishment of Topiary and a redefinition of fine dining that celebrates nature’s bounty.
Complementing Pollard’s culinary prowess is Full Circle Spirits, which marries traditional distillation techniques with the rich tapestry of flavours found in South Australia’s landscapes. From coastal botanicals to the golden grains of Yorke Peninsula, every bottle reflects a region.
The former Maximilian’s site, with its century-old homestead and panoramic vistas, serves as an ideal canvas for Ondeen’s vision. Once a beloved wedding venue which closed last year, it’s set to become a new hotspot of the Adelaide Hills.
The fusion of Full Circle Spirits’ philosophy and Chef Kane Pollard’s culinary narrative is set to offer a new standard of experiential tourism, spotlighting artisans, farmers, and the treasures of the 35th parallel South.
