Chef Krish Dutt launches intimate Asian-fusion eatery ‘Momoda’ at The Maid Hotel

One of Adelaide’s most historic hotels, The Maid is bringing a symphony of modern Asian Fusion and speakeasy vibes to the east with the launch of its new restaurant, MOMODA by Krish.

In a marriage of heritage and contemporary gastronomy, Adelaide’s renowned Maid & Magpie hotel, affectionately termed “The Maid”, has unveiled a brand new dining experience – MOMODA by Krish. Nestled in the east, this intimate 48-seater establishment promises not only tantalising modern Asian Fusion but also an essence of speakeasy that food aficionados will find hard to resist.

If the walls of The Maid could talk, they’d narrate stories from its long and storied history. Established in the 1800s, it has witnessed the city’s evolution, while also evolving itself. With the introduction of MOMODA, The Maid adds yet another feather to its storied cap, further solidifying its place in Adelaide’s rich hospitality tapestry.

MOMODA is the fruit of a collaboration between the Fahey Hotel Group and the culinary visions of Executive Chef Krish Dutt. Dutt, a culinary artist with a portfolio that includes the renowned Madame Hanoi and stints with the Jordan Royal Family, shares, “Over the years, I’ve had the opportunity to explore Japan, Thailand, Korea, China, Indonesia, and India, and let me tell you, it’s been an incredible journey. Through these travels, I’ve been able to grasp the art of balancing and combining these vibrant flavours, making them come alive in harmony”. This multicultural adventure promises patrons a sensory odyssey echoing with the thrum of South-East Asian streets, punctuated by the allure of house-infused Soju and enigmatic cocktail nights.

Dutt continues ““I was fortunate enough to join the Fahey Hotel in 2022. They have been incredibly supportive of my ideas and vision, giving me the chance to bring this dream to life, and I am so excited to see it come to fruition”.

If you’re wondering about the name ‘MOMODA’, it’s Chinese for ‘kiss-kiss’, a loving gesture symbolising the very essence of the restaurant – a space where the magic of food brings people together, creating memories and stories that linger.

Dutt’s pièce de résistance, the Chef Selection Feed Me Menu, is a gastronomic rollercoaster, with showstoppers including locally sourced Coffin Bay oysters, green papaya and jelly fish salad, Korean beef tartare, tempura oggi of mushrooms with lotus roots, robata grilled miso and ginger marinated salmon to Chinese five spiced marinated chicken. Krish proudly mentions, “Using fresh, local ingredients… each dish is crafted with attention to detail, flair, and innovative flavours”.

One can’t talk about MOMODA without highlighting its signature offering – Krish’s unique flavoured Soju. Krish’s appreciation for this Korean beverage, stemming from his time in Japan, led him to infuse it into the MOMODA experience. He believes that the “mild and fruity flavours of Soju compliment the umami and heat of my food perfectly, calming and refreshing the palate after each sip”.

“Using fresh, local ingredients from our trusted farmers and suppliers, I aim to showcase a menu that blends flavours harmoniously and surprises the taste buds. Each dish is crafted with attention to detail, flair, and innovative flavours”.

MOMODA’s design draws you in from the moment you step in. The blend of exposed heritage brickwork, indicative of The Maid’s age-old charm, juxtaposed against neon lighting and plush blue velvet seating, ensures that every visit feels both unique and familiar.

Krish envisions MOMODA as “a vibrant and energetic spot, perfect for enjoying late-night meals and drinks, or gathering with friends and family.
