The name, inspired by a line from Tennessee Williams, is a tribute to the world of hospitality.
This August, they’re taking things up a notch with their ongoing dinner series, ‘Two Chefs, Two Ways.’ Mark your calendars for August 10th because it’s going to be a night to remember. Local culinary legend, Chef Tom Tilbury, is teaming up with the brasserie’s own Head Chef, Stéphane Brizard, who brings his French expertise all the way from Brittany.
Chef Tilbury is a champion of local produce, and his sustainable approach shines through in his cooking. His passion pairs perfectly with Chef Brizard’s classic techniques, promising a menu that’s both innovative and deeply respectful of the ingredients.
The menu for this Saturday’s dinner is a mouthwatering fusion of both chefs’ styles. Imagine whole wheat sourdough with creamy butter, wild herb molasses, and smoked salt to start. For the main event, you can choose from braised fennel and white pea tart, tender rabbit fillet with sage and pancetta, or seafood delights like Spencer Gulf prawn ravioli and nannygai fish with a rich sauce.
And the desserts will take things to the next level – the baked chocolate torte with lemon gum oil and the unique Gâteau “invisible” aux pommes will satisfy any sweet tooth. To top it all off, restaurant manager and sommelier Mathilde Tytgat has curated a fantastic selection of wines, cocktails, and spirits.
A Prayer for the Wild at Heart is committed to doing good. They’ve drastically reduced their waste and actively support the community by donating food and time to the Westcare Centre.
