Adelaide has something exciting to talk about with the opening of a new cocktail bar at Hilton Adelaide – The Collins Bar.
Located in the heart of Adelaide’s CBD, The Collins Bar will occupy one of Adelaide’s most sought after locations, overlooking Victoria Square and the city. The Collins Bar will be the first name that comes to mind when people think of a unique offering of cocktails made with art and flair. It will also serve as a sanctuary for not only those who simply want to escape, but also to experience exceptional service in a relaxed atmosphere with a quality food and beverage offering.
Grant Collins is the creative mind behind The Collins Bar, and believes it is exactly what Adelaide needs.
“We wanted to bring something different, eclectic and diverse to the Adelaide night scene, something that the Adelaide public wants but has yet to experience. We are going back to old-school bartending and staying true to both the classic and the collins cocktail era using bespoke vintage glassware and making our own sodas, tonics and mixers,” said Grant Collins.
Peer Norsell, general manager Hilton Adelaide commented, “The Collins Bar will open at a milestone for the hotel, having just celebrated 30 years of hospitality in Adelaide. The bar is stage one in the ground floor masterplan. It will change the face of Hilton Adelaide and hopefully offer a unique bar experience – perhaps a first of its type in Adelaide.”
The Collins family of Classic Cocktails is omnipresent in cocktail publications and bars around the globe. Many believe these creations of the mid to late 1800’s were some of the Worlds first documented drinks as well as many being the earliest professionally created mixes. The Collins list of cocktails will feature ‘Vintage’, ‘Signature’ and ‘Bespoke’ selections as well as a ‘New School’ section featuring more progressive drinks.

The cocktail menu, designed by Collins, comprises of over 30 bespoke creations for all discerning palates.
“We have such a diversified cocktail menu at The Collins Bar with an era driven list featuring both modern and signature drinks. The bar will feature one of the most extensive selections of spirits in Australia, including a selection of over 45 gins and 55 bourbons, and will also have a vast array of scotches and tequilas all handpicked from around the globe. True to the bartending era of the 1920`s and 30`s we are making our own chipped ice and ginger beers and will also have the last navy consignment of Rum ‘1977 Black Tot Rum’ from the UK, one of only 3500 on the menu,” said Grant Collins.
The Collins Bar is Adelaide’s newest and most contemporary cocktail bar, opening in February 2013, where Adelaide should expect the unexpected.
