Hotpot lovers, get ready. Cult-favourite 18th Street Hotpot is expanding again, with three new locations set to open in the coming months across Burnside, Henley Beach, and Arndale.

Known for its deliciously rich broths, extensive ingredient selection, and as one of the first build-your-own soup experiences in Adelaide, 18th Street has built a loyal following since opening its original store at the Central Market six years ago.

Now, with demand for hotpot skyrocketing across the city – and a wait time of sometimes over an hour at the Central Market shop – the team is doubling down on expansion, and bringing a few upgrades along for the ride.

“We’re aiming to open Arndale towards the end of the year, while Burnside and Henley Beach are both expected to open within the next few months,” says Tom Lau, owner of Glenelg, Henley Beach and Arndale locations.

Each new store promises a refreshed design and updated interiors, featuring 3D logo elements and comfier booth seating.

“The first store has been open for a while, so the new spaces will feel a bit more elevated and modern. More comfortable, but still true to who we are,” he says.

While some locations are privately owned and others are part of the broader group, each venue shares a consistent passion for delivering authentic Chinese-style hotpot and a smorgasbord of fun ingredients.

“We keep the soup base traditional. We don’t overcomplicate it with lots of options and that’s what makes it so flavourful,” explains Tom.

“It’s all about customisation. You pick exactly what you feel like on the day – seafood, veggies, meat, whatever suits your mood.”

With new locations comes new additions to the menu, too.

“There’ll definitely be some new ingredients and maybe soup bases coming in if that’s what our customers want,” he hints.

“We’re always listening to our customers and try to offer something fresh.”

So why is hotpot having such a moment right now?

“It gives you a lot of choice. Other places might give you a set dish where there’s always something you don’t like. With hotpot, you always get exactly what you want. Every visit can be different,” he adds.

As 18th Street continues to grow, one thing is clear – Adelaide’s appetite for hotpot is growing along with it. And with a fuss-free, one-pot broth menu, these guys might just be dishing up the best in town.
