COMING SOON: Hoose Burger to open first store in Adelaide’s north after 20-year quest for the perfect burger

A cult burger favourite that rose to the top of Adelaide’s delivery scene is finally set to get a permanent home in Mawson Lakes.

It may be spelled ‘Hoose’, but owner Emille Yousefian hopes it’ll soon be the answer when Adelaide locals ask ‘whose burgers are the best?’

A brand that has built a cult following across Adelaide’s delivery apps is now making the leap into bricks and mortar, with Hoose Burger set to open its first permanent store in Mawson Lakes later this year.

Expected to open between late April and early May 2026, the new venue will seat around 30 diners and is currently progressing through council approvals and final fit-out plans. Mawson Lakes was chosen for its growing community and youthful energy, with the location sitting close to the university campus and Crowne Plaza Adelaide Mawson Lakes.

The space will feature arcade machines and a warm, welcoming interior with brickwork, darker tones and cosy seating designed to feel relaxed and inviting.

Behind the concept is founder Emille Yousefian, a self-confessed burger obsessive who runs Hoose Burger with his family. He says the new venue is the culmination of two decades spent chasing the perfect burger.

Hoose Burger first gained attention as a commercial food trailer, quickly building a reputation through Uber Eats and DoorDash. Within months, the brand was ranked among the top burger venues in South Australia on both platforms, with repeat customer numbers that surprised even its creator. “In the six to nine months we were trading, we had customers that had bought from us 246 times and 196 times.”

“We grew to become Uber’s and DoorDash’s number one burger bar in South Australia for a period,” Emille says. “The brand just took off. Influencers were reaching out, customers kept asking for a store, and we had to decide whether to keep the trailer going or open a proper venue.”

Even some of Emille’s closest industry friends were initially sceptical it could really be that good. One longtime hospitality operator, known for his brutally honest palate, put off trying the burgers for weeks because he didn’t want to disappoint him. When he finally gave in and ordered for his family, he called shortly after finishing the meal. “Mate, I’m going to tell you something I didn’t want to say before,” he told Emille. “I’ve never tasted anything like this in my entire life. It’s the most magical thing I’ve eaten.”

The decision to open a permanent location meant pausing the trailer for now, but the next chapter is already underway.

For Emille, the move into a physical space has always been about more than simply selling burgers. “We want it to be somewhere warm and welcoming,” he says. “A place where people can come in, have a great meal, and feel like they’re being looked after.”

That focus on customer connection has been part of the brand since its earliest days. During its delivery-only phase, Hoose Burger became known for handwritten notes tucked into takeaway orders, small messages of encouragement and appreciation that helped build a loyal following.

“We’d write things like ‘you’re important’ or ‘have a wonderful day’,” Emille says. “People would message us saying they couldn’t believe a burger place cared enough to do that. We want the restaurant to carry that same energy.”

While the experience will be warm and community-driven, the food itself remains the centrepiece. Emille has spent more than 20 years studying what makes a truly great burger, from bun texture and aroma to the order of flavours in every bite.

“Your nose basically touches the bun as you smell it. That sets off your brain. The next thing that your tongue tastes is a sauce, not the meat, so your sauce has to be on point. You then have to have the perfect caramelised meat, those super crispy lacy edges and that crisp taste, without taking anything away from the juice that’s inside the patty once you get to the centre. The cheese is the next flavour you taste. Then a nice sweet, crisp, fresh onion, and buttery pickles that have a sweet yet tangy flavour to them. That’s the ultimate burger, my friend,” Emille tells us.

Hoose Burger uses soft potato buns, premium grass-fed beef, locally sourced produce and custom seasoning developed over years of testing. The brand’s smashburgers are defined by ultra-thin patties with crisp, lacy edges and a juicy centre.

Signature menu items will include the classic smashburger, a jalapeño-packed Firehouse Smash, and the signature Billionaire Burger, stacked with double patties, house sauce, pickles, fresh and crispy onions, and sweet-spicy ‘billionaire bacon’.

Despite the confidence behind the Hoose Burger menu, Emille is quick to acknowledge Adelaide’s strong burger scene. “There are so many great burger places here,” he says. “I’m proud just to be part of that mix. But once people try ours, they tend to understand what we’re about.”

For a brand built on patience, passion and a 20-year pursuit of burger perfection, the upcoming opening feels like a natural next step, and one that Adelaide burger lovers will be watching closely.
