COMING SOON: Mylk Bar to open third location in Adelaide’s West End

Mylk Bar is coming to Waymouth Street in early September, following the success of its Flinders Street and North Adelaide locations.

The Mylk Bar – a licensed café, bar and brunch destination known for its great coffee and healthier food options – is opening a third location on Waymouth Street.

Mylk Bar will be taking over the ground level of the heritage-listed Tolley Building, the former home of Tolleys TST Wines, which operated in Waymouth Street from 1875. The building is currently being given new life by the Brazzale Group, which is developing the property into office spaces.

Mylk Bar owner Amin Ayoubi says the new location will be more food-focussed than his other two venues.

“The new location will offer the breakfast coffee trade, as well as lunch and tapas-style food in the evenings where there will be a lot of share options,” says Amin.

“There will be a focus on food, and we will be sourcing fresh, local produce and chefs that can produce their own ingredients rather than buying.”

Designed by Damien Campagnaro and Anna DiMarco of DC Architecture and Interior Design, the new venue will continue to encapsulate Mylk Bar’s eclectic style, with concrete floors, blue stone brick, wooden tables, and communal seating arrangements.

“There will be a lot of offices around! We’re going to set up a large concrete communal table opposite the bar – a perfect meeting place for a group of colleagues to meet after work,” said Amin.

“The building also sits alongside an alleyway. I’ve taken it over and decked it, so we’ve got an outdoor area. We’ve also constructed these humongous beams up the two levels that arch over the side. We’re planning to find some planter boxes and grow some greenery that will cover the roof.”

The Waymouth Street Mylk Bar will also have a big outdoor LED TV screen, perfect for watching sporting events.

Amin, who also owns the Duke of York Hotel, says it’s been a long-term goal of his to open more Mylk Bar venues.

“Mylk Bar has been trading since 2013. In 2020, pre-COVID, I was on a mission to open up more stores. I was going to open up three at the time, as I was trying to get the brand out there, but COVID obviously had a big impact and we dropped it,” said Amin.

Despite the pandemic slowing down progress, Amin has been able to steadily roll out new locations as the state begins to reopen. Late last year, Mylk Bar opened its North Adelaide location.

“I thought North Adelaide, which is a little bit more residential, would be a more attractive place to continue the journey,” he said.

“It’s been trading really well and breakfast and lunch. With everything reopening now, I’ve made the decision to continue my adventure of opening Mylk Bars, starting with the Waymouth Street venue.”

The Mylk Bar team is aiming to open the doors to the new Waymouth venue by 3 September 2022. It has also been hinted that a fourth venue is earmarked for Adelaide’s Southern Suburbs in the near future. Watch this space!

The new Mylk Bar will be located at 82 Waymouth Street, Adelaide 5000.

For now, you can find Mylk Bar locations at 57 Flinders St, Adelaide, and 53 Tynte St, North Adelaide.
