COMING SOON: Panino Bandito is the newest venue to hit the Adelaide Central Market

A fresh panini concept from the team behind Pressed & Co is on its way to Adelaide Central Market, with Panino Bandito set to bring a more rustic, fun-loving edge to the group’s offering.

While it shares the same DNA, owner Nedal Choujaa says the new venue will have its own name, fit-out and atmosphere, tailored to one of the city’s most hotly contested new food precincts.

Pressed & Co was launched by Nedal Choujaa and his wife Amber, but Panino Bandito marks a new chapter for the family business, with Nedal this time joining forces with his two brothers and their wives to bring the concept to life.

The new venue is all part of the $400 million Market Square development, allowing the market double in size and introduce a vibrant mix of new food, drink and specialty retail experiences. With construction underway and opening scheduled for late 2026, the expanded market will feature traditional market-style stalls, food and beverage kiosks and larger dining and retail spaces facing Gouger and Grote Streets.

Nedal said the family had been working to secure the site for more than a year, with Adelaide Central Market always high on the wishlist. “We love it. We’re existing market lovers,” he said. “We thought, wow, that’s what Adelaide needs.”

That long pursuit makes sense as the new Market Square expansion is one of the city’s most anticipated food projects, and Nedal believes Panino Bandido has landed one of the prime positions within it. He credited the team at Retail Network, saying they had “pushed really hard” to help secure the location.

The name, which was created by Nedal’s brother, is a not so subtle nod to what the main menu offering will be.

“Panino Bandito is a fantastic name, and my brother said it makes sense because we’re doing paninis.”

Much like Pressed and Co, the menu will introduce a range of unconventional items inspired by overseas concepts. One standout is a fruit-based panini using slices of watermelon, rockmelon, or pineapple instead of bread, and with cold cuts, honey, and other delicious morsels as the filling.

The biggest inspiration for the new venue was a trip to Lebanon, where they visited a deli in Aley called Deli Dough.

“We saw different ideas there,” Nedal said. These were ideas they really loved, and became motivated to bring back to Adelaide.

The menu will also extend to protein yoghurt bowls and fresh salad bowls, adding lighter options to the offering. The team says they are conscious of providing healthier choices for customers. Like Pressed & Co, the concept is being built with growth in mind, with the city site set to operate as a central kitchen producing breads and desserts for future locations.

For now, much of the fit-out remains under wraps, but Nedal said the brief is clear, a more rustic and market style interior.

“All I know is that it’s going to look insane,” he said.

With one of the Market’s hottest new spots secured and two Pressed & Co venues also on the way, Nedal and his family is building something well worth keeping an eye on.
