If you’re wandering near West Beach in coming months, don’t be surprised if your ears perk up hearing lively Greek music and your curiosity follows suit. The next thing you’ll notice is the scent of charcoal-roasted meats drifting through the air, and before you know it, you’ll be sipping ouzo, tapping your feet, and settling in for a feast at Vasili’s Table.

The new restaurant is set to open in the second half of 2025 at 5 West Beach Road, with a vibrant new fit out, designed to channel the energy of a Greek celebration, night after night.

Behind it all is Vasilis Petropoulos, an Australian-born chef of Greek heritage with a food footprint marked by a stamp-filled passport. Now Vasilis is getting personal again, with Vasili’s Table, a venue filled with Greek culture, from taverna-style dining, souvla spit roasts, and live Greek music on a purpose-built stage.

Vasilis took to social media to share that, “A bar with a focus on ouzos, whiskies, and gorgeous wines,” will welcome you in as you walk through the front doors.

Inside, the space will feature larger tables and make the most of its generous layout, perfect for hosting bigger celebrations or functions.

Vasilis also revealed that outside, under the verandah, “A stage, for live Greek music, lovely, casual two-seater taverna-style tables, and bigger tables,” will all be part of the new fit-out.

And what about the food? With eight spit souvla, the Vasili’s Table team will be roasting up a storm.

“There’ll be lamb, there’ll be chicken, there’ll be roast, there’ll be goat,” he continued. “There’ll be everything roasting on here.”

The new restaurant is moving into a beautiful, sun-soaked space that has seen a few different culinary tenants over the years. Most recently, five West Beach Road was home to Beachside, which closed its doors abruptly last year, and before that, Salsa Cucina was serving up Italian classics for several decades.

As the fit-out nears completion, one thing is clear: Vasilis has plenty of room to work with, particularly with a stunning indoor and alfresco layout. The wooden-panelled interior and curved dining room with floor-to-ceiling windows give the space a unique character, and we’re excited to see how the venue takes shape.

Known for building a portfolio of more than 70 restaurants across nine countries, you might already recognise Vasilis as the force behind Croydon restaurant, Billy’s Table. Another tribute to his name (this time, his nickname, Billy) this venue marked a return to the basics for him, and a personal project rooted in his early love for cooking learned in his family’s Greek kitchen.

Billy’s Table serves up wood-fired pizzas and seasonal cooking, and it’s likely Vasili’s Table will carry some of those comforting flavours into a whole new, even livelier setting.

So as we wait for the doors to open and the coals to fire up, one thing’s for sure: Vasili’s Table is shaping up to be a spirited new addition to Adelaide’s coastal dining scene, where the food is soulful, the music is festive, and everyone’s treated like family.
