Cult chef Duncan Welgemoed releases Africola cookbook

Named for Welgemoed’s South Australian restaurant, Africola details everything from home truths about the hospitality industry, to recipes for meats, seafood, and a slew of veggie dishes.

Duncan Welgemoed is a force to be reckoned with, and he’s adding to his repertoire with new book, Africola.

Named for Welgemoed’s South Australian restaurant, Africola details everything from home truths about the hospitality industry, to recipes for meats, seafood, and a slew of veggie dishes.

The book also includes a culinary encyclopaedia of ferments, condiments and pickles, a pastry section and recipes for “ridiculous” cocktails.

Welgemoed was born in South Africa, but has long called South Australia home.

He was head chef at The Goose at Britwell Salome, Watlington, Oxford when it was awarded a Michelin star in 2005, and has also worked at Le Manoir aux Quat’Saisons.

Welgemoed arrived in South Australia in early 2010, and opened the award-winning Africola in 2014, serving the bold, flavoursome food he’s become so famed for.

The release of the highly-anticipated book only further cements Welgemoed as a hospitality heavyweight who’s here to stay.
