d’Arenberg’s popular Singapore Circus restaurant has released new dates for its exclusive Sunset Dinners, offering a truly magical dining experience with stunning sunset views. Located on the third level of the d’Arenberg Cube, the Singapore Circus dining space showcases panoramic views of McLaren Vale, the Willunga Hills, and the Gulf St Vincent.

The next dinner will take place this Saturday night November 16th, with additional events on Saturday December 14th and Saturday January 25th. These Sunset Dinners are a unique chance to enjoy some of the best South-East Asian-inspired cuisine while admiring breathtaking scenery and experiencing the fun vibe that defines Singapore Circus.

The Sunset Dinners showcase a banquet-style menu curated by Head Chef Jamie Steele, known for his bold and flavour-bomb dishes that draw inspiration from South-East Asian cuisine. The menu features a variety of shared courses, along with a few individual dishes.

One of the standout dishes is raw scallops with a tomato-based fermented tom yum consomme. This tangy and slightly spicy dish sets the tone for the rest of the meal. Guests will also enjoy steamed edamame with fermented tofu butter and togarashi, as well as braised duck on a cassava cracker.

A special highlight is roasted bone marrow, served with nam jim jeaw sauce and grilled sticky rice. This dish is a personal favourite of Chef Jamie’s, and it’s likely to make its way onto the summer menu too.

For mains, the banquet includes Port Lincoln kingfish in a yellow curry, paired with cherry tomatoes and okra, and served with roti prata. Another main is the spicy wok-fried black pepper short ribs, served with butter noodles and a tangy Szechuan pickle.

Chef Jamie describes the menu as being all about “spring”, that it’s “fresh and vibrant.” He suggests pairing the roasted bone marrow with The Dry Dam Riesling, which complements the flavours perfectly.

For dessert, guests will enjoy a coconut sticky rice with pineapple granita, dried coconut, kaffir lime, and charred soft meringue – a tropical, sweet, and tangy finale to the meal.

As part of the experience, diners are invited to arrive half an hour early to enjoy a glass of Pollyanna Polly Sparkling on the top floor, overlooking McLaren Vale. It’s the perfect way to soak up the surrounding beauty before sitting down to the evening’s feast.

“It really takes in the scenery and shows off d’Arenberg in the evening, which is a little more exclusive in the evening,” Jamie says. “When it’s a clear day, you can see all the way to the ocean from the d’Arenberg Cube. It’s absolutely stunning up there.”

While Singapore Circus typically offers lunch service, the exclusive Sunset Dinners give guests the chance to enjoy McLaren Vale’s late-summer light and famous sunsets. These special evening events are a unique way to experience the best of McLaren Vale, with amazing food, award-wining wines, and beautiful views.
