“Nothing beats sitting outdoors on a beautiful summer’s night,” shared Tom.
“We’re expanding on our existing chef’s selection menu with little treats along the way. It’s a set shared-style menu, where we’re able to add some beautiful touches that are a little bit different from our lunch offering.
“We’ve got this beautiful fresh bonito that’s coming in! It’s plated with bread sauce, witlof, agrodolce, paired with a beautiful fragrant olive oil from Rio Vista called Hardy’s Mammoth EVOO,” Tom shared when asked about his menu favourites.
“We’ve also got a zucchini dish that’s really nice! It’s grilled, lightly pickled zucchinis over walnuts, grilled grapes and tarragon.”
Chef Tilbury is well-known for his creative cooking and commitment to sustainability. He has made a name for himself in South Australia, at places like Gather Food and Wine, Coriole, and Press Food and Wine.
