A special culinary collaboration is set to take place at two distinct celebrations honouring the introduction of Bird in Hand’s 2022 Syrah at the prestigious Raes on Wategos. Executive chefs Jacob Davey of LVN Restaurant and Jason Saxby of Raes Dining Room will co-curate an elaborate 14-plate menu across a two-day event, in two different States. The chosen dishes will highlight the finest local produce, complemented by a selection of Bird in Hand wines, meticulously paired by senior winemaker Sarah Burvill.
The celebration kicks off with a exclusive lunch on Sunday, August 25th, at Bird in Hand’s LVN Restaurant in the Adelaide Hills. This will offer friends of the winery and both restaurants the opportunity to preview the exclusive 8-course menu. The collaboration continues at another event on Wednesday, August 28th, at Raes on Wategos, inviting both Byron Bay locals and visitors.
During these unique dining experiences, guests will be guided through each course by chefs Davey and Saxby. Meanwhile, Burvill will provide insights into the paired wines. Andrew and Susie Nugent, founders of Bird in Hand, will also be attending both events.
Andrew Nugent shared his thoughts on the collaboration, saying “Bird in Hand is poured at some of the most well-known bars and restaurants around the world. Our partnership with Raes expands on this, and we are exceptionally proud to see the Bird in Hand label now listed for guests to enjoy at the iconic beachside hotel.”
He continued, “With Jacob Davey joining Bird in Hand upon the opening of LVN Restaurant earlier this year, it’s a privilege through this partnership with Raes to share his culinary approach beyond the Adelaide Hills. By collaborating with chef Jason Saxby, we are excited to bring a touch of our beautiful winemaking region to Wategos, and vice versa, first with this special event and then ongoing with our 2022 Syrah appearing on the Raes wine list.”
The event menus at LVN and Raes will feature an intriguing array of ‘snacks’ including wallaby tart with quercus truffles, and nannygai skewers with pickled fennel. These creations will pave the way to a wider exploration of Byron Bay and Adelaide Hills’ distinct tastes. Highlights include Davey’s wild venison smoked over bunya branches, and Saxby’s Australian Bay lobster glazed in fermented chilli.
The event is styled to progress from individual small plates to a series of complementary dishes, finalising with petit fours such as lemon meringue bombe Alaska with lemon myrtle ice cream. This culinary journey is flawlessly enhanced by Bird in Hand wines, alongside an exclusive sampling of the méthode traditionnelle pinnacle cuvée, Nest Egg Joy 2020.
Tickets to the LVN Restaurant at Bird in Hand x Raes on Wategos lunch at Raes in Byron Bay are priced at $195 per person, inclusive of all offerings.
Post-event, Raes on Wategos will continue to feature Bird in Hand’s 2022 Syrah and ‘O’ Sparkling on their wine list. The sparkling will also be available aboard the luxury yacht, M.Y. Sea Raes.
