Adelaide’s culinary scene is about to get even richer with the opening of Olive Restaurant.
Located on Pirie St, a bustling food strip renowned for venues like Osteria Oggi and Pizza e Mozzarella Bar, Olive promises to be a delightful addition by Adelaide foodies Callum Hann and Themis Chryssidis.

Drawing inspiration from the Mediterranean, Olive offers a tantalizing fusion of flavours. From the classics we all adore to innovative dishes that might raise Nonna’s eyebrows, the menu is a celebration of culinary creativity.
And for wine enthusiasts, Olive’s wine list, curated by the acclaimed Marcell Kustos, promises a journey through lesser-known Mediterranean vineyards.
When asked, ‘Why a Mediterranean restaurant on Pirie St?’, Themis Chryssidis the Managing Director of Sprout Food Group, responded by saying:
“It just feels right, and the business plan stacks up, but most of all, it feels right. In my opinion, Pirie St is one of the best dining strips in Adelaide for Monday – Saturday trade. It is continuing to grow and it’s only a couple of hundred metres down the road from our other restaurant, eleven restaurant and piazza.”


“In terms of the Mediterranean cuisine, well this is quite simply what Callum and I love to cook and eat. Fresh, seasonal, big flavours, uncomplicated, generous food. It’s food you want to share with your friends and family. South Australia has a Mediterranean climate and food culture with our wine regions, alfresco dining and commitment to quality, so it made sense for the food we love to be in the street we love, in the city we love.”

When asked, ‘What we can expect to see on the menu?’, Callum Hann, Sprout Food Group Executive Chef, said:
“We are so excited for this menu. It has big flavours, plenty of acid and lots of herbs and spices. The menu is designed to encourage all day dining so if you want to simply come in and have a few snacks and a glass of wine, you’re more than welcome, or if you want to have a long lunch or friends birthday dinner, you won’t go home hungry.”
“We are also hoping to open the bifold doors and encourage people to have a knock-off drink and snacks out the front of the restaurant. We want a casual, relaxed vibe, where good food, good tunes, good drinks and good people all come together.”


And, ‘Why Olive?’,
“Well, once again it just felt right. Names are often the hardest thing to determine when starting a new restaurant, but when you know, you know”, said Themis. “Firstly, Callum and I love Extra Virgin Olive Oil, we use it in everything we cook.
Secondly, it is probably the one ingredient that ties the Mediterranean together and is central to the Mediterranean cuisine. And thirdly, South Australia produces some of the best Extra Virgin Olive Oil in the world, so why would we not call a Mediterranean restaurant in Adelaide, Olive?”
Olive will bring a slightly more casual feel to Pirie St, a place where flavour, fun, family and friends come together. A light, bright fit-out, all day dining, generous share plates, unique cocktails and one of the most diverse wine lists in South Australia.
