The Botanic Lodge in the Adelaide Botanic Garden officially opened to the public today September 27th, created by Chef Tom Tilbury and Blanco Horner Hospitality. Located behind one of the country’s top dining destinations, Restaurant Botanic, The Botanic Lodge is set to have a relaxed yet stylish atmosphere, focusing on a connection with nature.

“I’m thrilled to bring this concept to life in such a stunning location,” Chef Tom Tilbury said.

“The Adelaide Botanic Gardens have always held a special place in my heart, and creating an everyday dining experience that complements and draws inspiration from this environment is truly exciting.”

The Botanic Lodge is located at the historic Simpson’s Kiosk site, which has been beautifully redesigned by Williams Burton Leopardi. The renovation keeps its Australian charm while adding modern touches, creating an atmosphere that only enhances the surrounding botanical beauty.

Chef Tilbury is well-known in South Australia for his creative cooking and commitment to sustainability, having made a name for himself at places like Gather Food and Wine, Coriole, and Press Food and Wine. At The Lodge, he will be focusing on celebrating local produce with a menu that changes with the seasons and supports ethical sourcing.

Some standout dishes include Tommies in bread and butter with iceberg lettuce and mayo, Nannygai with asparagus and lemon leaf in white sauce, and a Lamington dessert with quandong jam and coconut ice cream. These dishes showcase the best regional ingredients, offering diners a unique taste of the area.

As summer approaches, diners can expect weekend BBQs at The Botanic Lodge, along with a nostalgic soft rock playlist chosen by Chef Tilbury, featuring artists like Tame Impala and the Eagles.

“At The Lodge, we offer an experience that’s both accessible and extraordinary,” Tilbury says.

“It’s about showcasing the incredible produce we have here in South Australia, but in a setting that can be both indulgent and casual.

“The Lodge is a place where you can mark a special occasion and equally drop past for a glass of wine, a bit of Chisel and a plate of crumbed tommy ruff sandos.”

The Botanic Lodge will be open seven days a week from 10am to 4pm, with a full lunch menu starting at 11:45am.
