FIRST LOOK: Former Magill Estate chef heads the kitchen at new Hills farm-to-fire dining & stay

After running a boutique hotel in Europe, hospo veteran Julie is bringing fire-licked food and luxe stays to Adelaide Hills.

At first glance, 1000 Reasons could be mistaken for just another Adelaide Hills cafe with a pretty view. But with a former Magill Estate chef in the kitchen, fire at the heart of the menu, and plans for boutique accommodation on-site, it’s clear this just-opened venue is offering far more than a standard brunch stop.

Opening its doors on August 1, 1000 Reasons is the latest venture from hospitality veteran and interior designer Julie Culley, who returned to South Australia after years running a boutique hotel in Malta.

“There really are 1000 reasons why I needed to return home,” she says.

“I missed so many things about Australia, the connection to the land, the community, and of course family and friends.”

The venue operates Wednesday to Sunday, with breakfast from 8am–11am, lunch from 12pm–3pm, and takeaway coffee, flame-grilled sandwiches, pastries, and cakes throughout the day.

An ever-growing providore stocks pantry staples and local produce, with shelves championing South Australian makers like Salad Greens & Herbs in Echunga.

“Their blends of salad greens are exquisite,” says Julie. Adelaide Hills Harvest olive oils also feature, including their “to-die-for” lemon-infused variety.

In the kitchen, head chef Bradley Perrott – whose twenty-plus years in hospitality include stints at Magill Estate and The Pavilions at Lenswood – is cooking over a traditional Argentinian parrilla and rotisserie indoors, with open-pit asado grills outside. The smoke, the fire, and the backdrop of the Hills bring all the theatrics.

“Cooking with fire adds flavour and satisfies our primal connection to the place in which we cook,” Julie says.

“Asado elevates every ingredient’s taste profile, and the BBQs outside bring plenty of drama and ambience. We say everything here is fire-licked and soul-fed.”

The interiors are light, airy, and designed to frame the surrounding hills. Julie designed the project herself, calling it a “modern farmhouse,” with warm whites, black metal accents, and textured finishes. Outside, white tables, coloured chairs, firepits, and picnic rugs set the scene for long, lazy afternoons.

“It’s just a beautiful place, the large picture windows welcome the outside in from every angle,” she says. “It’s a true paddock to plate feel.”

Beyond the cafe, three geodesic glamping domes are on the way, expected to open in about a year, with global interest already pouring in.

“Many of our overseas guests from our previous Boutique Hotel in Malta want to come stay with us here in Australia,” says Julie.

Seasonal events are also part of the plan, and the first one is just around the corner. “Paella Paella!!!” is locked in for August 31 and it’s bringing pumping live music, sangria, and big pans of saffron rice cooked in the field. Father’s Day has plans to bring a set-menu feast, with details to be announced soon.

For Julie, 1000 Reasons is about creating a space where guests can slow down, connect with the land, and feel part of the community.

“It’s a space to take the load off, let us feed your soul, and enjoy the beauty of the Hills,” she says.

A thousand reasons to visit the Adelaide Hills this week.
