FIRST LOOK: Hilton Hotel unveils Bobbi’s Bar and Restaurant as a slice of nostalgia on South Road

The Hilton Hotel is set to unveil its latest dining destination, Bobbi’s Bar & Restaurant, on Friday, 25 August. A blend of modern Australian cuisine with a touch of European heritage, this restaurant promises an experience that will tantalize your taste buds and warm your heart.

James Franzon, the Hilton Hotel’s Second Generation Hotelier, describes Bobbi’s as a “nod to [their] history and a celebration of the present”.

The restaurant is a tribute to the late Robert ‘Bob’ Franzon, the publican who once ran the Hilton Hotel’s Bob’s Bar and Grill. James reflects, “It felt fitting to pay homage to the past as we look into our future”.

The journey to opening wasn’t without its challenges. Amidst uncertainties surrounding the South Road upgrade and government transitions, the Franzon family held onto their vision. “Our project is more than just a physical endeavor; it’s a celebration of our connection to the community and our determination to create lasting value,” James states.

Bobbi’s Bar & Restaurant is not just about food; it’s about memories. The restaurant’s branding, with its archival photographic style and simple luxury aesthetic, beautifully captures the nostalgia of the Franzon family.

The new pizza oven, imported directly from Verona, Italy, champions the family’s European roots. James elaborates, “Bobbi’s is about the meeting of old and the new in a fruit-of-the-earth type of place which celebrates the history of family and brings people together”.

Curated by Mareko Webb, the former Executive Chef of Qantas First Class International Lounge, the menu is a fresh take on seasonal modern Australian and Mediterranean cuisine.

Mareko promises, “Like Fedora’s we will adjust our offerings seasonally to ensure that we are offering fresh, quality, and local ingredients but it is definitely a more enhanced menu with Bobbi’s”.

From Spencer Gulf King prawns with a robust romesco sauce to fresh whole baby barramundi with house-made lemon oil, every dish is a celebration of local flavors. Not to forget the pizzas, with toppings like Prosciutto Crudo and Ortolana, that promise to be a crowd-pleaser.

The ambiance at Bobbi’s is designed to be inviting and warm. Georgie Shepherd Interior Design, the creative minds behind Kiin and Newton’s OVO Gelato shop, have transformed the space into a modern haven.

“Moving on from the more formal aesthetics of Fedoras, we wanted to create a more playful, light-filled space,” says Georgie. The use of textured walls, timbers, handmade tiles, and stone flooring gives the restaurant an earthy feel, while the pizza oven stands as a central feature, ensuring patrons are part of the culinary action.
