Byblos in Lebanon is believed to be one of the oldest continuously inhabited cities in the world, and now a tiny slice of that wonderful culture has landed on O’Connell Street in the form of a new restaurant, lounge and bar.
“Everything at Byblos from top to bottom is like you’ve landed in the heart of Lebanon. You’re getting the taste downstairs, and the culture upstairs,” co-owner Gaby Chahoud says.

The story of Byblos traces its roots back to Chahoud, who immigrated from Lebanon to Australia. His journey into the hospitality industry began in Angela’s Pizza and has since grown to include an impressive portfolio of over 16 restaurants across South Australia.
Some of those well-known establishments include Cafe Pellegrini, Cafe Palazzo and Da Vinci Restorante all located on O’Connell Street. However, it was the dream of sharing the authentic flavours of Lebanese cuisine that always remained close to the heart of Chahoud – and finally it’s come to fruition.

“Byblos is traditional Lebanese, but with a modern twist, and who better to do it than my father,” Chahoud’s son Jared says.
From the souks of Beirut to the sun-kissed orchards of the Bekaa Valley, the menu includes a variety of dishes which are a “taste of Lebanon”.

There’s a whole range of mezze on offer, like kibbeh nayye which is fresh raw meat, finely blended and mixed with burghul and Lebanese spices, served with a side of fresh mint leaves, red onion and shallot and delicious sambousik bjibneh which is a traditional Lebanese pastry, filled with mixed cheeses, shallots and parsley.
For mains there’s everything from tawook plates with char-grilled marinated chicken served with chips,
a Lebanese salad and garlic dip (toum), to char-grilled baby octopus sautéed with lemon, garlic and
coriander and served with chips, a Lebanese salad and a side of garlic dip (toum).
“People are loving our vegetarian mezze as well as our Byblos banquet which comes with everything you would need for the real Lebanese experience (it’s the whole of Byblos in that banquet itself),” Chahoud says.

Upon completing the dining experience or simply passing by, guests have the opportunity to ascend the stairs to the Byblos Lounge and Bar. This elegant space is perfect for enjoying drinks (including Lebanese mocktails and cocktails), hosting meetings, and enjoying traditional Lebanese bites and drinks.
Additionally, a Shisha Lounge awaits on the balcony, providing a unique experience rarely found on O’Connell Street.
The entire establishment, from its menu to its design, is a testament to the owner’s vision.
“This is a culmination of my life’s work. I’ve been in various forms of hospitality, but everything I’ve done has led up to this one moment. I want to bring my experience of Lebanon to Adelaide, right in the heart of the city,” Chahoud says.
