South Australia’s food scene continues to level up, with a myriad of new, exciting venues opening their doors. Tomorrow will see the launch of Penny Blue, where classic dining meets Modern Australian cuisine. Penny Blue is a luxurious new venue located in the highly anticipated, Marriott Hotel, which also opens to the public tomorrow.
In a seamless blend of nostalgic charm and modern comforts, the timeless design of the hotel, and restaurant within, is mirrored in the dishes on offer. The menu is a blend of old-school elegance, with a modern twist, shares Executive chef Alex Katsman.

Chef Katsman, a South Australian native, brings 20 years of experience in culinary management and menu design, gathered across premium hotels in South Australia and Tasmania.
“It’s a pleasure to be joining the Marriott Brand. They’re one of the biggest brands in the world, it’s absolutely amazing,” Chef Alex remarked.
Chef Alex has worked to create a comforting, but distinct menu that all can enjoy.
“Penny Blue has a nod to nostalgia tied in through the Modern Australian menu. When you come into the restaurant and open the menu you’ll see the classic dishes from entree to dessert. They are like old childhood memories.”

“When you come into the restaurant you might start with the sourdough-cob, very old school, then maybe a Spencer Gulf prawn cocktail, we do a really classic French onion soup, we bake it in the oven. Then on the mains, I think the most iconic dish is the Beef Wellington, it’s my favourite.”
Chef Alex explains that aside from the mains, the dessert is a must-try.
“The bread and butter pudding is served with rum and raisin ice cream. Absloutley amazing, and old school favourite.”

Penny Blue’s landmark site is within the historic General Post Office (GPO) building, which has been transformed into a world-class venue.
In an homage to the location, the restaurant is named after the incredibly rare and valuable stamp. Penny Blue reflects its unique heritage, embodying the idea that, like this treasured stamp once passed through the Adelaide GPO, each dish is crafted with exceptional significance.
“Everything the Marriott is implementing in South Australia, with the beautiful heritage GPO building and the food and beverage outlets is so exciting. It’s my pleasure to be a part of it,” Chef Alex shares.
The restaurant’s design incorporates historical elements, aligning with the ambience of the historical GPO. This atmosphere is complemented by a curated wall of 44 archival photographs, telling the rich tales of the past eras and personas associated with the GPO.
