The intimate new venue is brought to you by the powerhouses behind Good Gilbert, Burgertec, and Asha, and might have the most stylish fit out yet. Introducing Gilbert’s Wine Bar & Grill!
Opening it’s doors in full capacity on Monday, the bar has soft-opened this week with a limited selection of their menu and drinks list. From Monday, Gilbert’s will look to open 7 days for lunch and dinner sittings. The powerhouse trio, Wilson Shawyer, Steve Tzanakis, and Ashley Peek are beyond thrilled to be finally bringing their new project into the world.
Shawyer said with a smile, “I f%*#ing love this venue, I love it so much.”
The menu follows suit with a format similar to Good Gilbert in the sense that everything’s shareable. It has a fresh European flair to it, with an American undertone. It takes inspiration from all of the group’s venues, providing a perfect snacking, sharing combination of offerings in a single space.
When I asked why the west? Shawyer simply said, “Why not?”
“There’s nothing Gilbert’s here in this area,” Shawyer said. “The west has always been a keen interest of ours.” He says choosing a space has to be all about the location and what they can do with it. “It all depends on the location and what the bones of the building are,” he said.
“We are very fortunate that we have Steve (owner of Burgertec) hence the Good Burger collab – it’s the burger and bar world coming together.”
The space used to be a Burgertec site, with predominantly a takeaway business model. But, the beautiful, spacious venue was somewhat under-utilised, the perfect opportunity to turn it into a spectacular, colourful, full-blown dining space.
After a 12-month lead up, the team have finally got things in place to pull the trigger. Shawyer says the team wanted to be in a really comfortable place where venues Asha and Good Burger were fully settled before opening Gilbert’s doors. Now is that time!
“It’s the best fit out yet!” Shawyer says. The ‘Boston Ivy’ coloured walls serve as a cosy, textured backdrop – but you can hardly see them past the endlessly creative artwork decorating almost every inch of the bar.
Shawyer says he still needs more artwork. I’m not sure where he’ll put it, but it’ll look damn good. The bar has close to 100 pieces at the moment – at which the framer was gobsmacked, saying, “How are you going to hang up 100 pieces?”
