FIRST LOOK: Valley Ramen brings secret Japanese ramen formula to Adelaide CBD

Birthed from an unforgettable ramen recipe from southern Japan, Valley Ramen is the newest ramen house to land in Adelaide.

A little restaurant outside of Kumamoto in Japan’s south has served the same ramen recipe for 50 years, with a rich, silky broth, springy noodles, and deep umami. The moment the Wang family tasted it, they knew it was a flavour worth bringing home.

After a brief but meaningful exchange with the owners, both parties agreed the Wangs would bring the secret ramen formula back to Adelaide, and from that, Valley Ramen was born.

Kumamoto Ramen

The family-run restaurant has moved into 14 Witcombe Street, just off Gouger Street, and is set to open officially on Thursday 24 July.

Wyan Wang, from the family, says, “The restaurant is something my dad (Harry) wanted to start for a long time.”

“He really loves ramen. In fact, my whole family and I love ramen. It’s the perfect meal to leave you feeling full. It’s tasty, fast, and perfect if you’re working and don’t have too much time. Just one bowl and you’re good to go.”

The menu is succinct. There are four ramen options, two gyoza, six snacks, and three sides. With such a tight selection, each dish is finely tuned, and there’s no wrong choice. The Kumamoto Ramen, rich with pork and smoky depth, offers a taste of southern Japan, and a glimpse into the family’s journey to bring it home. The Osaka Ramen with tender chicken, Tokyo Ramen with a citrus slice garnish, and Hokkaido seafood Ramen are all just as crave-worthy.

On the side, you can order edamame, seaweed salad, and Ajitama soft egg. For snacks, Valley Ramen is serving up Hiyayakko (Japanese cold tofu), Takoyaki (octopus balls), Karaage chicken, special chicken breast, waffle fries, and chips. Pork and beef gyoza are also available.

Wyan says, “Our noodles are homemade, and we make all the soup ourselves using the original formula from Japan.”

The wine list features local selections, including drops from Lambert MGO, a boutique label partly owned by the Valley Ramen team, adding a personal touch to the drinks offering.

Inside, the restaurant feels fresh and spacious, with a bright, modern fitout that nods to Japanese design. Lanterns light the ceiling and wood panelling accents the walls. It’s elegant, but keeps the dining experience casual and lively.

As opening day approaches, Wyan says the details are being fine-tuned, staff trained, and menus finalised. But one thing’s for sure. The ramen is already spot on.
