This spring, South Australian talents are bringing the heat. Despite the gloominess that the hospo scene has witnessed, the innovation and creativity of chefs around Adelaide is giving us plenty to look forward to. Staġuni
Opening Spring 2024, Barossa
Meaning ‘seasons’ in Maltese, Clare Falzon took to her Instagram to announce her newest project, Staġuni. Located in Seppeltsfield, Falzon is transforming the old Marananga School and turning it in to a place she dreamt of as a child. Drawing in influences from European eateries, her Maltese heritage, and her global experience and knowledge from Gordon Ramsay’s Maze and Petrus, Sydney’s Nomad, and Hentley Farm, Falzon is ready to give Adelaide an incomparable experience.
“The menu will be connected to seasonality, land and community. The dining room will offer al a carte and set menu options, while seating outside will accommodate afternoon drinks and snacks. I’m looking forward to showcasing a range of wines both from the Barossa Valley region and broader.” says Falzon.

Station Road
Opening November, 2024.
On the ground floor of the impressive Festival Tower, Station Road promises a dining experience that is approachable yet grand in its style. Head Chef at Elsworth for three years, a contemporary restaurant inside de Louvre, and four years as the Head Chef at Clamato, Chef Baine Stubbs is ready to wow Adelaide with dishes like lobster cannelloni with Iberico ham and mornay sauce and dry-aged tuna with a red pepper reduction and cultured cream.
General Manager & Co-owner Mathieu Smeysters says, “Station Road will be an unrivalled destination for foodies and wine lovers alike, which will complement Adelaide’s terrific dining scene,” says Mathieu. Chef Baine describes his cooking style as “unpretentious and clean”, focusing on creating refined dishes using the freshest, locally sourced produce.

The Botanic Lodge
Set to open September, 2024.
The Botanic Lodge, positioned behind the iconic Restaurant Botanic, will be providing Adelaide with high-end yet accessible experience for everyone to enjoy. Bringing his extensive experience and passion for a farm-to-table dining approach is Chef Tom Tilbury, who states “It’s about showcasing incredible produce we have here in South Australia, but in a setting that can be both indulgent and casual.”
Often regarded as a leading figure in modern Australian cuisine, Tilbury, who has made a significant mark with ventures like Gather Food and Wine, is ready to charm diners with Restaurant Botanic’s sister, The Botanic Lodge. Tilbury’s approach highlights a deep appreciation for local produce and sustainable practises. The Lodge will serve as a platform to celebrate and elevate South Australian ingredients in an accessible environment.

Eleven relaunch: Roma Restaurant & Deli
Opening August 28th, 2024.
After three years of serving up incredible fine-dining, Eleven on Waymouth Street closed, but in its memory, Roma Restaurant & Deli will be opening – a more relaxed atmosphere that also aims to celebrate high-quality food and service. Serving up modern Italian, master minds Chef Callum Hann and Themis Chryssidis are giving Adelaideans plenty to look forward to.
Roma Restaurant & Deli promises to offer a unique dining setting which makes the most of the venues incredible piazza area that encourages diners to relish meals in a vibrant, outdoor environment. The new direction focuses on the integration of space and environment as core elements of the dining experience.

Marriott – Penny Blue
Opening August 22nd, 2024.
Penny Blue is set to become a new culinary hotspot, offering a 126-seat dining area that will serve Modern Australian cuisine, peppered with innovative takes on classic dishes. Behind it all is Chef Alexandre Katsman, a South Australian native who is bringing 20 years of experience to the Penny Blue.
“Menus with a nostalgic touch are trending globally because they offer comfort and evoke cherished memories. At Penny Blue, we blend ‘new and modern’ with classic favourites like Prawn Cocktail, Beef Wellington, and Bread and Butter Pudding for dessert, creating a menu that celebrates both tradition and innovation,” Chef Alex remarked.
Named after a rare stamp once processed through the Adelaide General Post Office, Penny Blue seeks to make each dish as memorable and valued as its namesake. The restaurant’s design incorporates historical elements with a wall of 44 archival photographs, telling the rich tales of the past eras and personas associated with the GPO.
