This Grenfell Street brunch & dessert destination is championing the rainbow

Nakita Cattonar and Nick Millgan’s Uniqorn Eats serves up vibrant, tasty brunch and dessert.

When two longstanding hospo mates found their jobs heavily impacted by the ongoing COVID-19 crisis, they thought why not go out on their own. 

It was a risk, but it’s paying off, with Nakita Cattonar and Nick Millgan have a colourful café, Uniqorn Eats.

The two-story café is located on Grenfell Street, in a building previously attached to the old produce markets. 

Nakita says the interior is white, with bursts of colour to match Uniqorn’s kaleidoscopic menu, and stain glass windows upstairs. 

Considering restrictions, the café can seat up to 46 people, with an outdoor are also on offer for patrons. 

Uniqorn is serving dessert and brunch (yes, they can be one and the same, I asked), with the rainbow an ever-present theme in the menu. 

“We’re serving rainbow hummus toast, and rainbow toasties,” says Nakita. 

When I ask what constitutes a rainbow toastie, she explains the béchamel sauce that features as the cheese, with the team adding colour during the cooking process to achieve the distinctive result. 

Uniqorn champions plant-based food, with much of the menu suitable for a vegan diet. 

Nakita’s menu highlights include the rainbow pancake stack, served with ice-cream and mascarpone, and the pancakes with a house made, vegan Bueno sauce. 

She also mentions the variety of smoothie bowls Uniqorn will be serving, bright in colour, of course.

Social responsibility is a big focus for Nakita and Nick, with Uniqorn to use biodegradable packaging, and renewable energy.

Nakita says she wants the café to be a place where all are welcome, and tells me Uniqorn is partnering with Minus 18, a charity that creates safe spaces for at risk LGBTQ youth.

As for the name?

“Nick just kind of got inspired out of the blue,” chuckles Nakita. “It’s different, like we are.”
