Change is inevitable in the hospitality world, and for Deeb and Andrea Milky, it’s about making the right moves to keep delivering the exceptional dining experiences their community loves. With that in mind, they have made the difficult but strategic decision to close their third venue, allowing them to focus on their two beloved Brighton establishments – Alimentary Eatery and The Alchemists’ Kitchen.

In a statement they provided to Glam Adelaide they have said.
After much reflection, we have made the decision to close our third venue Santi’s. The reality of ongoing staff shortages, an unpredictable hospitality industry, and simply being stretched too thin has led us to this moment. But while this chapter closes, we’re not slowing down – we’re sharpening our focus and doubling down on what we do best.
Alimentary Eatery and The Alchemists Kitchen our two first babies at Brighton are our heart and soul. We’re putting everything we’ve got into making them better than ever. This isn’t a setback—it’s a strategic move to ensure we can keep delivering the exceptional food, service, and experience that our incredible community deserve.
To everyone who supported us at our third venue, we are beyond grateful. Your presence has meant the world. We’re taking that energy with us as we level up our two Brighton venues and we can’t wait to welcome you with fresh ideas and even more passion.
Big love to the customer base that have supported us for the last 6 years.
You are all part of what keeps us in business and pushes both of us to strive harder than ever to execute all the ideas we have.
The loyalty and love has given us the ability to continue doing what we love and to keep our two doors open.
Onward and upward! See you soon down South!
Cheers Deeb and Andrea Milky

While one chapter closes, the focus is now on enhancing the two thriving venues that Brighton locals know and love. The Alchemists’ Kitchen, with its contemporary Italian influence, remains a hotspot for its handcrafted pizzas, unseen wine collection, and imaginative cocktails. Known for alchemy and magic, the venue continues to be a destination for those seeking incredible food and an unforgettable atmosphere.

“Our pizzas have become a favourite in the community, and we’re excited to continue serving them with the same quality and flavour that our customers love,” said Andrea.

She reiterates that one of the biggest challenges they’ve faced in recent years has been staff shortages, which ultimately led to the closure of Santi’s.
“The reality is that hospitality is seeing a decline in interest, making it increasingly difficult to sustain multiple venues while delivering the standard we strive for. South Australia’s hospitality scene is incredibly diverse—for a city of our size, we would rate it on par with Melbourne and Sydney. The biggest challenge we face as a state is the perception that people need to travel interstate for a great experience, when in reality, SA is thriving and only getting better,” said Andrea.
“In fact, by focusing on our two wildly successful venues, we have employed two new Head Chefs. Exciting changes are underway at Alimentary Eatery. We’re delighted to welcome our new head chef, PK, who is bringing fresh creativity and expertise to our kitchen. With an inspired new menu, an elevated dining experience, and the much-anticipated return of Alimentary Nights, there’s never been a better time to visit. We’re also excited to welcome a new head chef at The Alchemists’ Kitchen, Juri, who is set to take the venue to new heights, redefining flavours and setting a new standard for excellence.”

Meanwhile, Alimentary Eatery remains the go-to spot for vibrant brunches, nourishing lunches, and creative cocktails and mocktails, all served up in a laid-back, setting near the beach. The name “Alimentary” is proudly worn on staff shirts, symbolising its dedication to nourishment and quality—something that will only be further elevated in the coming months.
“We’ve always believed that food should not only taste amazing but make people feel good too. That’s the philosophy behind Alimentary Eatery, and it’s something we’re more committed to than ever.”
Now, with their full focus on these two beloved Brighton venues, Deeb and Andrea are more committed than ever to creating fresh experiences, innovating their menus, and delivering the exceptional hospitality that has built their loyal following over the past six years.
“This isn’t just about keeping our doors open – it’s about continually pushing boundaries, trying new things, and giving our customers something truly special every time they visit.”
This is not the end – this is a transformative new beginning. Patrons are encouraged to visit, support, and be part of the exciting next chapter at Alimentary Eatery and The Alchemists’ Kitchen, where the best is yet to come.
Andrea expresses her gratitude to the loyal community that has continued to support their journey:
“Supporting local businesses has never been more important and I can’t thank our regulars enough for their continued loyalty. Your support means the world to us, and we feel truly blessed to be part of such a strong and passionate community here in Brighton. We’re excited for what’s ahead and can’t wait to welcome you in soon.”
