A new seaside dining experience landed in Henley Beach late last year and the Mediterranean inspired eatery is about to hit the next level.
Having opened its doors in December last year, HNLY has become a haven for locals no matter the occasion offering up fresh, local produce with a strong focus on seafood, and while it’s always been great, it’s about to become amazing with the introduction of their newest staff member, Amy Dunleavy.
Amy joins the team at HNLY as a customer-focused Venue Manager and brings with her a wealth of experience. Having spent five years at Adelaide dining institution Press* Food & Wine before spending another five years at the award-winning Fino Restaurant at Seppeltsfield, she also had the pleasure of working with none other than Jock Zonfrillo for a short time so she is no stranger to a high-class kitchen.
The team behind HNLY, George Kasimatis, Peter Louca and Angela Papas say Amy is the missing part of the puzzle and with the already popular menu drawing customers in, this last piece will ensure repeat clientele are a mainstay of the business.
As the new kids on the block, the team at HNLY know it’s important to be quality-focused, to build their clientele and ensure they are here for a long time to come – which is exactly what Amy was brought in to do.
Knowing he needed an amazing customer-focused Manager, George reached out to a mutual colleague, who recommended Amy and she was put forward for the role after departing from Fino Seppeltsfield and taking a short break. “I retired for about 5 minutes and now I’m back” she laughs.
Aware of the reputation and commitment to quality that Angela, Peter and George are known for in the Adelaide hospitality industry, Amy was instantly drawn to the business. Their existing help and support for the HNLY team only reconfirmed her commitment to the role.
“I’m very much about making sure the venue runs smoothly and efficiently, and team management and culture is something else I’m really strong on, so I’ve come to help streamline processes,” she says.
“Staff training is also a focus, which will all result, hopefully, in an improved customer experience.
“We want to make sure customers want to come, and then come back,” Making sure they feel welcome,” she continued.
“It’s very much locals, and our menu plays to that too – you can come with friends and just get fish and chips by the beach, or come for a tasting menu – plus it’s got such a great fit-out and it’s such a nice space”.
And while Amy is bringing her charm and expertise front of house, the team back of house have been hard at work developing the second instalment of the menu which has followed the changing of the seasons and leaning to a more warming feel.
The ever-popular tuna, roast chicken and salmon pate will all remain on the menu, as “there are a few staples that people won’t let us get rid of” explains Grant Schooling, Executive Chef to HNLY.
More seafood and vegetarian options will be on offer including whole baked fish, a Goolwa Pippy chowder and a baked King Ora Salmon with a lemon butter sauce. The new, mouth-watering menu launched earlier this month so if you’re looking for an excuse to go, this is it.
