Golden Beetroot Salad
Executive Chef Tony Hart said “what I really love about this menu is that we’ve been able to recreate some of my favourite dishes from all corners of the globe utilising locally sourced ingredients – except of course where not possible such as the caviar. I’m particularly fond of Patrick’s (Chef de cuisine) beetroot salad and the amazing prune and earl grey chocolate brownie. I also recommend the pasta which is sourced from Pangkarra, a fantastic local family owned business who have diversified into pasta, from what was originally a wheat and legume farm near the Clare Valley.”
