Lark Distilling teams up with Fugazzi Bar for experimental whiskey release

Lark Distilling have released their Chinotto Cask II and it can be tasted with a new cocktail at Fugazzi Bar and Dining Room.

Lark Distilling Co. have released their most experimental single malt whiskey to date, the Chinotto Cask II.

Inspired by the Italian Summers and family filled, big food gatherings, the undeniable zest is best shared and enjoyed with friends and family.

Partnering with South Australian Italian restaurant, Fugazzi Bar and Dining Room, the partnership have created a special cocktail called, The Chinotto Cask Manhattan along with a smoked chocolate mousse and salted macadamia featuring Chinotto Cask II.

This will feature on Fugazzi Bar’s menu for the entire month of April. 

Lark’s Head Distiller, Chris Thomson is excited to share Chinotto Cask II with the world.

“We released it last year and it got 95 out of 100 at the Australian Whiskey Awards,” Chris said.

“This year we actually made our own Chinoto at our Cambridge distillery. We seasoned the casks which gave birth to Chinotto Cask 2.0.”

Lark carefully seasoned whisky casks with handcrafted Coal Valley Chinotto to create a wonderful, innovative marriage of flavours.

With a bittersweet, citrusy cola of a cool, refreshing Chinotto taste, there will be no need to travel to Italy for a taste of their Summer.

“It’s big, bold, and full of life,” Chris said.

“I get so excited every time I taste this whisky because there is not another one like it. I get to see people try this whisky for the first time and it brings me joy when I get to see their faces light up.”

For those unable to make it to Fugazzi Bar and Dining Room during April, the team have shared the exclusive recipe for the Chinotto Cask Manhattan that can be made at home: 

Chinotto Cask Manhattan: 

  • 60ml Lark Chinotto Cask 
  • 15ml Sweet Vermouth 
  • 15ml Dry Vermouth 
  • Two dashes of bitters 
  • Stirred down 
  • Flame Orange for garnish

Fugazzi Bar and Dining Room’s Bar Manager, Maeve Marryat said it will be a cocktail that sees traditional meeting nostalgia.

“It will be a traditional Manhattan with a sweeter twist from the Chinotto Cask,” Maeve said.

“It was transform you back to old school New York. We do encourage walk-ins for the bar, so head on in to try the new cocktail, but please make reservations for restaurant.”
