After a uni subject turned into a full-blown passion project, Callum Roy has officially popped the cork on his new label, Libation. Launching with three bold Barossa Shirazes, Libation brings a fresh take on tradition and adds a thoughtful twist to the wine-drinking experience.

The name Libation itself is steeped in meaning. Traditionally, a libation is a drink poured out as an offering to the gods or to honour someone special, and that sense of reflection, gratitude and celebration is at the heart of this brand. It’s not just about the wine. It’s about the moment.
Founded in 2022, Libation has been a labour of love for Callum, who set out to craft premium wine that genuinely captures the magic of the Barossa.
Now, that dream is bottled up and ready to pour.

The range includes Moment No.01 (RRP $110), Moment No.02 (RRP $90), and Moment No.03 (RRP $80), each one a tribute to the region’s signature style with its own character. All of the wines are crafted with grapes from the iconic Hoffmann Dimchurch vineyards, sixth-generation Barossans whose vines don’t mess around.
Moment No.01 is a 2023 Shiraz that’s bold and velvety, packed with blackberry and cherry notes, with subtle oak and a spicy finish. These grapes come from the revered Dallwitz block.
Moment No.02 is lush and perfumed, with jammy blackberry and hints of vanilla, redcurrant, and a festive lick of licorice. The grapes here are grown in red-brown Barossa earth, laced with creek gravel and quartz.
Moment No.03 rounds out the trio with smoky, peppery aromatics, ripe plum and blueberry, with chalky tannins and a cedar finish that lingers nicely.

But the wines aren’t just about flavour. They come with something extra. Each bottle features a tear-off label strip, and on the back of that strip? A toast.
“The labels have a little tear-off strip on them, and on the back of it is what I call a ‘toast’,” Callum explains.
“The idea was that when people pour this wine, they can take a moment, sit back and reflect on how good things are.”
There are 15 unique toasts, each with a thoughtful or heartwarming phrase, like the one Callum shared during his mother-in-law’s 60th. These are almost like good fortunes!
“It said how friends become family,” he recalls, “and she loved it.”


For Callum, starting Libation is “about being able to do something that I really wanted to do for such a long time… creating memories and the sharing of moments with family and friends.”
