Madame Hanoi comes alive with Chilli Fest for one more week

Madame Hanoi has kicked off its fiery month-long Chilli Fest – a food feast dedicated to the hot-so-humble spicy pepper. Ends 14 May 2022.

Chilli Fest at Madame Hanoi is a scorcher festival of flavour that continues in the CBD until Saturday April 29th.

The all-new chilli infused menu includes a wide range of heat levels, and there’s certainly a dish or two that will make even the biggest chilli-fanatics sweat.

During Chilli Fest diners are invited on a journey from Habanero to Jalapeño, exploring the range of flavours and sensations that the pepper family has to offer.

A limited-time dinner menu will be on offer throughout the month, with feature dishes including Chilli Crayfish Pho.

If that’s not hot enough, try the spicy Pork Tomahawk on Wednesday nights (bookings essential) or choose your own heat level with 1kg of Chilli Chicken Wings on Thursday nights.

Chase the heat with a selection of cocktails at varying heat levels, including the fan-favourite Spicy Marg.

Chilli Fest is the happiest time of year for chilli enthusiast and head chef Raj Kumar, who has led the Madame Hanoi kitchen since 2017.

Raj’s career in kitchens across restaurants in Australia, New Zealand and Fiji has set the stage for his hottest challenge yet.

Raj said: “Chilli does more than taste, it brings the sensation of heat that mixes with the flavours of the dish to become something even bigger.

“Chilli Fest is an opportunity to put chilli front and centre, to celebrate it in dishes like the Chilli Crayfish Pho, where it’s an essential element of the broth, the sauce and the toppings.”

Prior to joining SkyCity, Chef Raj sharpened his expertise and passion in the kitchen in Fiji, New Zealand and throughout Australia across a number of different cuisines, and he has now discovered his exciting niche, bringing French influence through Vietnamese cuisine at Madame Hanoi.

Also available are chef’s bottled chilli sauces for those who want to bring the heat back home. Raj and his team have assembled signature sauces across the spectrum of heat, from the tingling Smoky Dragon to the eye-watering Dark Horse.

Chef Raj, who rates the jalapeno and red cayenne pepper as his favourite chillies thanks to their unique flavours and easy to blend herbs, said: “Chilli Fest is all about creating flavours and welcoming our diners to try different varieties of heat, different colours of chillies, and creating guest memories.

“I relish my time at this point of the year going to farms and hand picking the chillies to showcase to our guests at Madame Hanoi, through making our own sauces, chilli jam, chilli oil and chilli chocolate.”
