Campbelltown store and bar, Mercato, will host its annual passata-making weekend this February! Learn how to make passata and pelati using locally gown Roma tomatoes on Saturday 19th or Sunday 20th February from 10am to 2pm.
An authentic Italian delight to many, Mercato is known for its fresh produce, Italian wine, homemade pastries, and of course – its house-made sauces.
Family and friends gather to learn from Imma and Mario Caporaso, the passata-making experts and beloved parents of Mercato’s Managing Director, John.
In the 70s, Imma and Mario opened a humble continental deli in Rostrevor, selling cheeses, oils, smallgoods, and eventually kitchenware and winemaking equipment. In 2022, the family business celebrates its 50th year of operation, now known as Mercato.

Imma and Mario continue to share Italian traditions and family secrets to families and friends eager to learn. From the cutting, peeling and boiling of the tomatoes, to the pouring and bottling of the final tomato puree, Imma and Mario go through the process step-by-step.
“I want to teach the next generation so that our traditions continue when we can’t do it anymore,” Imma said last year. “We have learnt different methods along the way, and we love passing on these tips and tricks.”
After the hard work is done, each guest gets to enjoy a three-course authentic Italian feast with matching Italian wines. Past lunch items have included Italian pastries, Coriole olives, panzanella salad, pizza, and pasta. In previous years, guests have also had the pleasure of trying Imma’s own Napoletana sauce and taste their own passata they spent the day making.
Guests tend to leave a Mercato passata day not only with a years’ worth of passata (at least)… but with a sense of achievement, a fully stomach, and the satisfaction of learning something new.
