The Adelaide Central Market has announced Masa Bakery as its latest Producer in Residence. This addition introduces a unique and authentic Latin American culinary experience to its lineup, with Masa’s delicious products available until August 3rd.
Masa Bakery, founded by Colombian native Diana Lozada and her husband Camilo, brings a range of traditional Latin American breads and pastries to the heart of Adelaide. Diana, a skilled pastry chef, is passionate about her craft and delights in the art of baking. Her co-owner and husband, Camilo, complements her culinary skills with his extensive background in business and marketing.

The pair have carefully curated Masa Bakery’s selection to reflect the vibrant flavours and textures typical of Latin American fare. According to Diana Lozada, “I am thrilled to showcase my skills and passion for pastries at the Producer in Residence stall. Sharing my culinary expertise is important to me, as I want Australia to experience the vibrant flavours of Latin America. Through our pastries, we aim to take people on a delightful food journey, celebrating the diverse tastes of our heritage.”
Customers visiting their stall at Adelaide Central Market are treated to a visual and culinary celebration of Latin America. One of the most notable offerings is the ‘Bread of the Dead’. This traditional treat has deep cultural significance, especially in Mexican culture where it is used in Dia de los Muertos celebrations. Placed on altars known as “ofrendas,” it serves as an offering to departed loved ones.
Fabienne Reilly, General Manager at Adelaide Central Market, said, “We are thrilled to welcome Masa Bakery to the Market as our current Producer in Residence. Their traditional, handmade products are a wonderful addition, and we encourage customers to experience their cuisine.”
