A taste of Melbourne’s cocktail scene is preparing to take over an Adelaide laneway, with Melbourne institution Gin Palace set to ‘dock’ in the city for a one-night-only takeover at Hains & Co this June.
Part of Bartender’s Weekender, the cult bar will take over the Gilbert Place venue on Tuesday, June 16th from 10pm, bringing its signature old-world hospitality and late-night cocktail theatre to Adelaide for the first time.
For years, Gin Palace has been one of Melbourne’s worst-kept secrets among bartenders. It’s a dimly lit, velvet-draped hideaway known for its martinis, refined G&Ts and sets a vibe where ‘just one drink’ rarely means just one.
Now, Gin Palace bartenders Jack and Jacob are stepping behind the bar at Hains & Co for a night of elevated pours and unapologetic indulgence.

Expect 90ml martinis served with precision, cult classic cocktails, elegant gin and tonics, and even Melbourne’s famously ‘legally protected’ chicken sandwich, complete with bacon salt and Tabasco on the side.
In true Gin Palace fashion, there’s also a layer of intrigue. A non-disclosure agreement (NDA) is part of the experience, a detail that feels entirely on brand for a venue built on whispered recommendations and late-night lore.
The night will also feature pours from Never Never Distilling Co, adding an extra layer of South Australian spirit to the Melbourne-meets-Adelaide event. So with limited space, late-night timing and a reputation for things getting slightly out of hand in the best possible way, organisers are warning this is not your average Tuesday night drink.
