On July 6th, Mollydooker and Hoosegow Charcoal Restaurant & Bar are are whipping up a five-course degustation night, which offers a delicious selection of Hoosegow favourites and acclaimed Mollydooker originals. Here’s just a sneak preview of what’s to come …

Kingfish ceviche with wakame + 2016 “The Violinist” + 2016 “Scooter” Merlot.

Chargrilled lamb cutlets, truffle celeriac mash, pancetta crumb, red wine jus and confit garlic + 2014 “Enchanted Path” Shiraz Cabernet + 2014 “Carnival of Love” Shirzaz

Caramelised figs, dark chocolate and roasted hazelnut marquise with vanilla labneh.

If you’re not familiar with Hoosegow, their menu reflects owner Ara and Shadia’s flavour journey – what they enjoy eating, what flavours interest them, and what they like to cook. What started as a favourite chilli chicken dish now stars on their menu as their Signature Chilli Chicken with jalapeno aioli. Other popular dishes include their confit garlic with charred ciabatta, Harra baramundi with chilli, and their interpretation, “hoosegow” with espresso, cointreau, chocolate gelati, toffee almonds and cardamon. Their menu is a fusion of charred, juicy, spicy, and smokey flavours: their chefs have worked closely with Ara and Shadia to bring Latin American, Eastern, and Asian tastes into their thoughtful menu.

Mollydooker’s story has romantic origins. In 1991, Sarah and Sparky Marquis has married. They had three things: the experience of their winemaking studies, $1000 in their pocket, and a dream to open their own business. Over the following years, they developed a variety of award-winning wines for Sarah’s parents company at Fox Creek, entered the bulk wine industry, and built Marquis Phillips Wines. After two unforeseeable situations left them almost broke, Sarah and Sparky’s love, hard work, and determination eventually lead them to build their own winemaking company in 2005: Mollydooker, named after an Australian slang term for ‘left-handed’. Incidentally, both Marquis’ are left-handed.

They created a range of wines that were housed by beautiful packaging and design, with dashes of colour and images intended to tell a story. Mollydooker’s “wow-factor” is not only their attention to detail and commitment to excellence, but their signature ‘Marquis Vineyard System’, which ensures all grapes are nurtured to achieve intense fruit flavours, and ‘Marquis Fruit Weight’, a unique fermentation process that measures how far back on your tongue the velvety sensation of fruit goes before you experience the sensation of structure. Critically acclaimed, Mollydooker inevitably became a success. In 2007, the Marquis’ acquired a McLaren Vale property to host their business. Fast-forward ten years, Sarah is now the chief winemaker and owner, promising high quality, good service, and passionate wine-making.
