Mount Lofty House Announces New Winemaker, Xavier Bizot Of The Bollinger Family

The great nephew of Lily Bollinger and the descendant of a Champagne dynasty, Bizot brings his own heritage and experience to create the limited edition Sequoia Sparkling for Mount Lofty House.

Mount Lofty House has welcomed and entertained guests in the sprawling Adelaide Hills for the past 167 years. Now, the iconic five-star hotel will embark on an exciting new chapter, having appointed Xavier Bizot as its new winemaker. 

The great nephew of Lily Bollinger and the descendant of a Champagne dynasty, Bizot brings his own heritage and experience to create the limited edition Sequoia Sparkling for Mount Lofty House.

Made from the pinot noir and chardonnay grapevines planted on the estate by Arthur Hardy in the 19th century, only 1,500 bottles are produced each year.

A former corporate lawyer turned specialist winemaker, Bizot and his wife, Lucy Croser, started their own vineyard, Terre à Terre, in South Australia in 2007.

Having both grown up in winemaking families – Bizot is also the general manager of Tapanappa for industry great Brian Croser – his expertise and family history makes him perfectly suited for his new role at Mount Lofty House.

The Chardonnay Vineyard

Each guest to the estate’s three-hat Hardy’s Verandah Restaurant received a glass of the limited edition Sequoia Sparkling. On top of that, guests begin their experience with a tour of the 3,500 bottle wine cellar, carved into the sandstone under the original manor house.

With a ‘Valley to Verandah’ concept, Hardy’s Verandah’s executive chef Jin Choi’s seasonal menu is a celebration of local produce and pairs with the best local, national and international wines.
