Father-son duo, Johnny and Dylan Raslan, are bringing a new quality high-end food offering to the north east, with Dilano’s Risotto and Pasta Bar.

“Love what you do. Do what you love. And do it well,” is experienced chef Johnny’s motto.

Specialising in risotto and pasta, the food is an up-market unique spin on traditional Italian; simple and full of unique flavour combinations, served in a modern way.

Johnny believes in using only the best quality produce and most is sourced locally – fresh seafood so close it is from Newton Seafood Works, the shop next door.

The menu is seasonal, changing every quarter, and includes contemporary dishes Johnny says you won’t find anywhere else.

The current signature risotto dish is a Melanzanne Affumicate (smoked eggplant, walnut fennel and goat curd) and the pasta dish is a Cassarecce Dilano (asparagus, peas, mushroom and truffle cream).

Diners can expect a warm and comforting space with an open kitchen adding to the ambiance.

It’s full table service, and don’t be surprised if Johnny comes to the table to ask what you think of his cooking!

“I want people to come in as a diner and a friend, and leave as family,” Johnny says.

Opening Dilano’s is a dream realised for Johnny, who has lived in the area for 20 years, made even more special by being able to do it with his son.

The name and décor inspired by Johnny’s late sister – you’ll notice purple touches, which was her favourite colour.

Dilano’s Risotto and Pasta Bar is open 10.30am to 9pm Monday to Friday, and 10am to 5pm Saturday, and is closed on Sunday.
