Have you ever tried oyster gin? Now’s your chance to!

Never Never Distilling Co. have created an Oyster Shell Gin in collaboration with Melbourne’s recently launched seafood restaurant, Society.

Never Never Distilling Co. Brand Director Sean Baxter said the gin makes an exquisite martini.

“The lashings of wax flower and salinity scratch the itch of anybody who loves savoury martinis,” he said.

“We love it dry with a lemon or grapefruit twist, obviously accompanied by a fresh local oyster where available.

“For those partial to a gin and tonic, it works really well with Fever Tree Mediterranean tonic water and a lime leaf garnish.

“It’s the perfect example of a sophisticated, citrus-forward coastal highball.”

The gin will be launched in collaboration with Society, whose team helped guide the direction of the release to work alongside some of the venue’s signature seafood dishes.

“Oyster shell is an ingredient which delivers minerality and a subtle sea spray character to our gin,” Sean said.

“It’s a flavour supported by the carefully considered inclusion of other coastal ingredients such as Geraldton wax, salt bush and Tasmanian wakame.”

Pacific oysters sourced locally from Kangaroo Island were used in the production of the gin after their contents were first used on site at the Never Never Distillery Door.

“The oysters are first consumed before the shells are cleaned and added to the pot still,” Sean says.

“A little goes a long way with oysters, only a few dozen shells are required to convey the subtle flavour that is required in the overall run.

“Their inclusion brings a brightness to the gin’s complexity and a savoury note that is essential in communicating the coastal character we wanted to demonstrate.”

Never Never Oyster Shell Gin is one of a handful of oyster shell gins available globally and in Australia.

“It’s in a style that’s growing particularly here in Australia,” Sean said.

“The guys at North of Eden in NSW actually released their own oyster shell gin several weeks before ours. There are some fantastic expressions out of Japan & Scotland as well.”

Never Never Distilling Co. are quickly becoming renowned for their innovative approaches to flavour, with the Dark Series being the ‘engine room’ for their experimentations and trials.

Previous Dark Series collaborations such as their Black Juniper Amaro released with Melbourne’s The Black Pearl cocktail bar have won global innovation awards as well as Best In Class at the World Liqueur Awards.

The Oyster Shell Gin will be available from Society once it reopens its doors as well as Never Never Distilling Co.’s distillery door and website for $75.

If you want to purchase a bottle now, you can subscribe to Never Never’s mailing list where you’ll receive an exclusive access link to their presale.

Presale of the gin went live yesterday, October 22, for Never Never subscribers only.
