Never Never Distilling Co and Black Pearl have teamed up to create Black Juniper Amaro and we’re officially launching it in South Australia, this Sunday 10th of November at Hains & Co. There will be cocktail specials and tastings as well as Black Pearl’s drink wizard, Shay Chamberlain rocking the bar. Never Never founders George, Tim & Sean will be on the other side propping up the bar talking all things amaro (and most likely eating sausage rolls). Tastings and cocktails start from 6pm and will go till late so make sure to swing by.

ABOUT BLACK JUNIPER AMARO

Never Never Distilling Co. have always been massive fans of what the Black Pearl represents. The bartenders that have graced the boards of the Fitzroy institution are some of the most respected and talented hospitality professionals in the country, leading to Black Pearl winning a swag of awards including Best Bar Australasia 2017, Worlds Best  High Volume Bar ~ Tales of the Cocktail, Best International Cocktail Bar ~ Tales of the Cocktail 2017 and a plethora of other international and local awards to boot.

Black Pearl team members Shay Chamberlain and Matt Linklater travelled to Adelaide to assist us in the creation of something pretty unique – a juniper forward Amaro. Together, we selected and blended various steeped and distilled ingredients to formulate the product.

At the heart of the release is a roasted juniper steep, something that Tim discovered on a hunch, while hungover after a night on amaro. The caramelised sweetness of the infusion combined with the gentle bitter undertones of the roasted juniper set the foundations upon which the rest of the amaro was built.

Inspired by the deep, dark earthiness of Alpine amari, the team built a release that combines three different juniper extraction methods blended with traditional alpine bittering herbs. After months of experimentation and tireless trial, the we arrived at our first batch of Black Juniper Amaro.
