NEW! Cheekies Hot Chicken To Make Its Debut At This Year’s Fringe

Hot chicken may not be huge in Adelaide, but it certainly is up-and-coming, with the recipe becoming more refined and truer to its roots — until one day, us Adelaideans will also get a genuinely authentic taste of hot chicken.

And that day is coming soon! Say hello to the newest venture, Cheekies Hot Chicken, launched by Rashaad Cézar of BRKLYN and his business partner.

After taking a trip to the US, Cézar experienced true Nashville hot chicken. Not once, not twice — no — he hit up as many hot chicken joints as he possibly could, including Princes in Nashville (the original hot chicken venue), Hattie B’s, Dave Hot Chicken, and their biggest inspiration, Howlin’ Rays.

“There was a culture around hot chicken that went above and beyond the chicken itself,” Cézar says. “Groups of friends and families would gather to get their hot chicken fix, with places like Howlin Ray’s having two to three hour queues!

“It was truly an experience unlike any other and something we knew we had to attempt to replicate back in Adelaide.”

Back home, they set out to use all they had learned in their travels to put together a recipe that they felt really captured the essence of hot chicken, modified slightly to the Australian palate.

With imported chilis from the US, including Carolina Reapers and Ghost Peppers, as well as their own home-grown chilis, the spice mix sounds like nothing Adelaide has seen so far.

The chicken is fried in a secret flour mix and then dunked in a hot oil mixed with various spices. This mix is then coated with a dry rub containing various spices too. The result is crispy fried chicken at varying heat levels.

The hot chicken experience is currently as follows:

Select your main (currently the hot sando or tenders), select your heat level (no heat, mild, medium, hot, super hot), and then enjoy.

Where can you get your hands on this delicacy? Cheekies Hot Chicken will be popping up every weekend during Fringe through BRKLYN on selected dates — with the first public tasting being on Friday, 7 February from 5pm.

After the Fringe, Cheekies Hot Chicken plans to move into the pop-up space within BRKLYN, the space that currently houses Let’s Be Frank hotdogs and previously housed New York Fold pizzas.
