New eatery Travertino’s Pizzeria brings a touch of Roma to the western suburbs

The owner Dario says that his favourite pizza on the menu is the Norcina, which is a creamy white base with truffles, mushrooms, Italian sausage and mascarpone.

A new pizzeria has graced Woodville South with its Roma-style pizza base, and its name is Travertino’s.

Dario, Owner of Travertino’s Pizzeria, decided to start his own venture after 10 years of working back-of-house at Antica Pizzeria.

During his years working for Antica Pizzeria, Dario confesses he often used to turn to making Roma-style pizza for staff meals, which both pleased his co-workers for the pizza’s great taste and himself for making something he thoroughly enjoyed.

In search for a way he could embrace this style of pizza and share it with others beyond staff meals, is exactly where Travertino’s Pizzeria began.

Local to the area, Travertino’s is bringing something new to the Pizzeria market. After only being open for six weeks, business is already beginning to grow.

Dario only wanted to open with a simple, traditional menu at first, in order to see how the locals would react to his take on Italian food. Offering a range of Roma-style pizzas, both red base and white, Antipasti and dolci or dessert, the simplistic menu is enough to satisfy any craving for authentic Italian food.

Dario says that his favourite pizza on the menu is the Norcina, which is a creamy white base with truffles, mushrooms, Italian sausage and mascarpone.

What sets Roma-style pizza bases, known as Scrocchiarella, apart from Neapolitan-style pizza, is the notable thin, crispy crust, which is different from the thicker, more doughy bases of Neapolitan-style pizza.

The pizza bases also differ in the amount of time each takes to cook, as Roma-style bases are harder to get the right consistency, affecting the pizza’s quality.

The name Travertino comes from a type of stone used in Italy historically to build infrastructure and is what the Colosseum in Rome was built with. This stone is also used for cooking on and is the name of the town where Dario himself grew up Travertine.

Dario hopes to expand his business in the future with the upcoming release of a new menu.  He’s got  some exciting things in store, including the pending receipt of his liquor licence.  Once received, Dario also plans to have a selection of Italian beer and wine, much loved Aperitifs and other notable Italian cocktails to select.

Even in these early days, Travertino has already established itself as a pizza lover’s experience.  We’re looking forward to seeing Dario’s business grow from strength to strength.
