The city’s most iconic five-star hotel, Hilton Adelaide, has officially been bought by Amora Hotels & Resorts, a family-owned luxury brand from Thailand that clearly has big plans for its Australian footprint.
They’re not just here to put their name on the door, they’re rolling out a $40 million transformation to take this Adelaide landmark to the next level.
For over 40 years, Hilton Adelaide has been the city’s go-to for luxury stays, high-end events, and a touch of old-school grandeur. Sitting proudly in the centre of Adelaide’s CBD and backing onto the world-famous Adelaide Central Market, it has hosted countless business events, wedding receptions, celebrity VIPs, and international jet-setters.

However, a change is as good as a holiday, and Amora is coming to town with a bold vision. They’re planning a top-to-bottom revamp that promises to turn this Adelaide grand dame into a sleek, modern, five-star destination that will make even the most seasoned traveller do a double-take.
No corner of the hotel will be left untouched. From the guest rooms and conference spaces to the lobby, restaurants, and event areas, everything is getting a serious refresh. Located at 233 Victoria Square, Hilton Adelaide has been destination for both business and leisure travellers since 1982. With 377 guest rooms, 20 conference and meeting rooms, and top-notch amenities like a tennis court, gym, and swimming pool. It is also home to the COAL Cellar + Grill and The Collins Bar.
As the transformation unfolds, one thing’s for sure—Adelaide’s newest five-star era is just getting started, and it’s going to be something special.
Hilton will bid farewell to the iconic hotel in June 2026 when its management agreement ends, closing the chapter on nearly four decades of history at the Victoria Square site.
